My boyfriend was curious about bone kalguksu, so we went to Jinhae Jang Bone Kalguksu, Yangsan Branch (진해장뼈칼국수 양산점). We ordered bone kalguksu and a small galbi-flavored grilled pork bone dish, and the grilled bones stayed with me as much as the noodles did.

Where is the Yangsan branch, and how does parking work?

The restaurant is opposite Pusan National University Yangsan Hospital, in an alley lined with restaurants in the Beomeo development area. Its address is 14-10 Hwahap 3-gil, Mulgeum-eup, Yangsan, Gyeongnam, South Korea, 1F. You can park in front of the restaurant or use Hwangsan Park Public Parking Lot; a ₩1,000 parking-fee subsidy was listed for use of the public lot.

The hours listed in the original post were 06:30–20:30, with a break from 15:00 to 17:00. It is closed every Tuesday.

What is the atmosphere like, and what should you know before ordering?

We visited late on a rainy evening. At the time, there were more delivery orders than dine-in customers. The interior was clean and cool with the air conditioning on, and menu photos on the walls helped with ordering.

We chose one bone kalguksu and one small galbi-flavored grilled pork bone dish. At the time of our visit, there was also a notice saying that joining a review event came with a tasting portion of cold boiled pork or a drink.

The basic side dishes were kimchi and kkakdugi (cubed radish kimchi). The restaurant said the kimchi was spicy and recommended kkakdugi for people who do not handle spicy food well. The self-service bar had kimchi, kkakdugi, and sauce, so we could take more as needed.

How is bone kalguksu with boneless meat?

The bone kalguksu arrived first. It normally comes with pork backbones, but we paid an extra ₩1,000 to switch to boneless meat because we wanted to avoid the work of picking the meat off the bones.

The broth was rich and deep. It felt like the kind of soup I would think of when recovering from a night of drinking. With the boneless meat, it was convenient to eat the meat right away with the kalguksu noodles without picking it apart separately.

The spicy kimchi went well with the milky-white kalguksu broth, so I went back for it twice more. It suited my taste, but the kimchi could be very spicy for anyone who struggles with spicy food.

What are the price, portion, and taste of the small galbi-flavored grilled pork bones?

At first, I wanted to choose the garlic soy sauce grilled bones, but a notice said they were very spicy. Since my boyfriend does not handle spicy food well, we ordered the galbi-flavored version. The small galbi-flavored grilled pork bone dish was ₩15,000 and came with three large pork backbones.

After seeing the grilled bones, we also ordered beer. The pork backbones were large, and scallions, onion, and carrot came alongside them. The vegetables went well with the meat.

When I put on the gloves and pulled the bones apart, the meat came off easily without much effort. There was plenty of meat attached to the bones, so the portion felt generous.

The galbi-flavored sauce was sweet and savory. After trying it, I was glad we chose that flavor, and I felt it was a taste that families visiting with children might enjoy.

We finished the meal feeling full from the kalguksu and grilled bones. On the way out, I also saw maesil tea (Korean plum tea) prepared as an after-meal drink.
