Duck baeksuk restaurant in Asan with herbal tree broth: Oneungi Shabu
In short
Oneungi Shabu Baeksuk (오능이샤브백숙) is a neungi mushroom baeksuk (whole poultry boiled in broth) restaurant in Eumbong-myeon, Asan, South Chungcheong Province. Two friends shared the neungi nurungji (scorched rice) duck baeksuk, whose broth is simmered in water steeped with cudrania (gucchippong) and eomnamu (castor aralia) wood plus neungi mushrooms. The broth was rich and the duck tender, with self-refill side dishes and complimentary neungi golden mushroom tea and sikhye. For a summer stamina meal with duck instead of chicken, the broth at Oneungi Shabu Baeksuk is worth tasting first.

Why duck baeksuk instead of chicken for a summer stamina meal
This time my stamina meal was the neungi nurungji duck baeksuk (duck simmered whole in a medicinal broth) at Oneungi Shabu Baeksuk in Eumbong, Asan. When summer comes, people split into two types. Those who have no appetite in the heat. And those who say they have no appetite while pulling into a baeksuk restaurant's parking lot. I'm the second type. 😂
"Let's keep it light today." That sentence has no power in front of baeksuk. Baeksuk isn't something you eat lightly; it's something you lean back in your chair for and say, "Today, I choose you." So once again I made up an honest excuse about stamina. The excuse is stamina, but my heart said chicken. But I'm not eating chicken today, haha! Because today~ I'm eating du.ck. haha!
These days, searching for Asan restaurants wears out my phone first. Why are there so many good places?! I agonize over "this one or that one?" and just get hungrier. Then I thought, "Fine, let's go where the duck calls me!" and went to Oneungi Shabu Baeksuk, a popular pick for Asan baeksuk. It's also talked about a lot as an Eumbong favorite, so I was kind of excited.
Anyway, at a baeksuk place I check the broth first. If the broth is rich, then "today I'm booked for two bowls of rice." Duck isn't something you eat lightly; you go with your stomach properly emptied. So I made my "I really should get some stamina food" excuse very boldly and set off for duck.

What is the atmosphere like at Oneungi Shabu Baeksuk?

You take your shoes off to enter, and the restaurant feels as comfy as eating at home. I came for Asan neungi duck baeksuk, and the place looked just like the photos I'd seen, which was oddly nice. 🤣 The moment I took my shoes off, I relaxed.

Today it's Asan neungi duck baeksuk! My heart is pounding!

I came to Asan for one reason: a whole pot of Asan neungi duck baeksuk arrived! It feels like Mom at home saying "Sit down, quick~", so my nerves switched off the second I walked in.
What is the neungi nurungji duck baeksuk broth made with?

I was told the neungi nurungji duck baeksuk here is simmered in water infused with gucchippong (Korean mulberry-type tree) and eomnamu (prickly castor aralia), plus real neungi mushrooms. I took one spoonful of the liquid and thought, "Isn't this more than just water?" No wonder people looking for Asan baeksuk come here. The broth is rich, and the duck is so tender my chopsticks wouldn't clock out. 😂
Hunting for an Eumbong favorite and finding this kind of care made my spoon speed up. The broth was deep and rich, and the meat melted gently in my mouth. Everyone eats Asan samgyetang (ginseng chicken soup)! Me, I'm eating Asan duck baeksuk!
Tasting the rich herbal broth first

The broth was thick yet clean, and the duck was surprisingly tender. They put effort into the water first and then boil the broth with neungi mushrooms, so this is why people talk about it as an Asan favorite.
Neungi nurungji duck baeksuk: the wow moment

If you're looking for Asan baeksuk, a setup like the neungi nurungji duck baeksuk is worth trying once. The broth was rich and the meat moist.

Hmm... I think I get a bit of why Oneungi Shabu Baeksuk is talked about as an Eumbong favorite. The duck was so tender that chewing time felt like a waste.
Rich broth and tender duck together

Coming to Asan was worth it! I'm moved! There was a reason the broth was so rich. I think people looking for an Eumbong favorite would like this too. The duck was moist and tender.
I came for Asan baeksuk and ended up enjoying the mushrooms thoroughly too.

One bite 🤣 and I thought, when you wander around looking for Asan restaurants, some days you run into this kind of care. You can feel the grain of the duck meat!
Are the side dishes self-refill at Oneungi Shabu Baeksuk?

Yes, the side dishes are self-refill. At an Eumbong restaurant I'm the kind of person who circles the side dishes before the main, and Oneungi Shabu Baeksuk put me in a good mood from the start. 😂

The crunchy radish and the refreshing kkakdugi kept pulling my hand back, and since refills are self-service, I kept going back for one more round. Asan restaurants really put effort into the side dishes too.

Around Asan, some places have a great main but ordinary sides, right? But here I liked the side dishes from the start. The seasoned pickled radish was crunchy and I kept picking it up, and the kkakdugi followed every spoonful of broth automatically. 🤣 With self-refill, I shouted "this is the last time!" three times. If you come for Asan baeksuk, enjoy the sides too.
Oneungi Shabu Baeksuk event

When I visited, a sign announced an event: order samgyetang and get upgraded to neungi samgyetang. They have events like this too! 😊 It feels like a proper Asan favorite that looks after small fun as well as the meal! An upgrade? Oh.ho.ra
Is neungi golden mushroom tea and sikhye served after the meal?

Yes, neungi golden mushroom tea and sikhye were free, and we could drink as much as we liked. This Asan favorite is serious about dessert too. The sikhye tasted like Grandma made it, and my friend said "This isn't tea, it's medicine!" and kept drinking cup after cup of the golden mushroom tea... 🤣 I drank sikhye, my friend looked after their health, and we both left happy after coming for Asan baeksuk.
Even the finish is hearty. Don't just eat Asan samgyetang! There's duck too!

I ate at Asan's Oneungi Shabu Baeksuk!
Who is Oneungi Shabu Baeksuk in Asan good for?
I'd recommend the neungi nurungji duck baeksuk to anyone who wants to restore their stamina with a hot broth. That day I realized: people get nicer when their stomachs are full. 🤣 Before eating I was thinking "what will I do when I get home?", and after eating all I could think was "who should I bring next time?" So I'm quietly recommending it to anyone looking for an Asan restaurant.
- Anyone who wants to bring their parents and hear "good pick~"
- Anyone who wants real Asan baeksuk instead of fried chicken on bok nal (the hottest days of summer) 😂
- Anyone who prefers hot soup over greasy food
- Anyone who got here while searching for Eumbong restaurants
Next time... I should come back with my bank card instead of a friend. It was so good that one bowl wasn't enough. 🤣 The Asan neungi mushroom aroma is lovely. The nurungji (scorched rice) is chewy and fun to eat, and when you take that last sip of sikhye, a satisfied "ah, that was a good meal" comes out on its own!
