Sindorim Korean restaurant: clam kalguksu sold out, seaweed rice ball
In short
Sindorim Sambaekga is a Korean restaurant on Gyeongin-ro near Sindorim Station in Guro, Seoul, specialising in jokbal and bossam served with kalguksu combo sets. Arriving just after 12pm on a weekend, the writer found every table full and waited briefly, then ordered the bossam and kalguksu set with an extra rice ball; the clam kalguksu was sold out, so the regular version arrived instead and its broth was spicy and clean-tasting. Between the garlic sauce and the seaweed-flake rice ball, Sindorim Sambaekga earned a 100% yes to going back.

Sindorim Sambaekga just after noon on a weekend: how long is the wait?
Sindorim Sambaekga is a jokbal (braised pig's trotters) and bossam (boiled pork wraps) restaurant with kalguksu (knife-cut noodle soup) combo sets, located on Gyeongin-ro near Sindorim Station. I stopped by today to fill up before heading to E-mart in Sindorim to do some grocery shopping. I got there just past 12pm on a weekend, and true to its reputation as a well-known Sindorim spot, the place was already packed!

We had to wait a bit too, but luckily table turnover was fast, so we didn't wait long before getting seated. The interior was pretty spacious too, plenty of room for a lot of people.
If the wait gets any longer, it'd be nice if they set up waiting chairs or some kind of sign out front! A lot of people didn't realize others were already waiting and tried to walk right in ahead of them.

Sambaekga's menu: why the sets beat ordering à la carte
If you visit Sindorim Sambaekga, I'd recommend checking the combo sets on the menu first! They pair jokbal or bossam with kalguksu, and it's a much better deal than ordering each dish separately.

We were craving bossam today, so we ordered the bossam+kalguksu set, and the rice balls looked good too so we added those on.
Kalguksu options and unlimited barley rice at the self-serve bar
For the kalguksu, you can choose between spicy, perilla, or clam. Unfortunately the clam was sold out when we went, so we ordered the regular kalguksu instead.
Here's the key thing to remember! At Sambaekga, ordering kalguksu gets you free refills of barley rice. You can grab barley rice and various vegetables from the self-serve bar, drizzle on some sesame oil, and mix it all together. We were already so full from what we'd ordered that we sadly had to skip the barley rice...

Looking around, a lot of people were enjoying the cool kong-guksu (chilled soybean noodle soup), and the glossy jokbal at the next table looked amazing too! I made a mental note to definitely try the jokbal next time.
How is the bossam? Tender pork and the special garlic sauce
The bossam arrived first, and it looked moist and tender at a glance. It was boiled without any gamey smell, and had a texture that just melted in your mouth.

The side dishes that came with it (kimchi, dried radish strips, chive salad) were all great, but what really impressed me was the garlic sauce, standing out among the three sauces (ssamjang, garlic, spicy)! The sharp yet sweet garlic sauce went perfectly with the bossam meat.
Wrapping a piece of tender meat with chives, dried radish, garlic sauce, and ssamjang all on a fresh lettuce leaf and eating it in one big bite was extremely satisfying...!

Spicy kalguksu and the seaweed-flake rice ball add-on
The kalguksu that came out next passed the visual test right away! The broth was really spicy and refreshing, the kind that clears you right out. I was a little sorry we couldn't get it with clams, since that would have made it even richer, but the basic broth on its own was already excellent.
The owner didn't hold back on the seaweed flakes for the rice ball, so it was the ultimate in nutty flavor. Eating the rice ball together with bossam and kalguksu — there's no way that combination isn't delicious!

Green grape candy and peach juice after you pay
From the top-notch quality of the bossam meat to the well-rounded kalguksu combo set, it was an overall very satisfying meal. On the way out after paying, they even had green grape candy for a palate cleanser and cold peach juice waiting! The owner's thoughtfulness sent us off in a great mood right to the end.

By the time we left, two more parties had already started waiting, and after trying it myself, I completely understood why people line up for this place. If you're looking for a hearty, delicious bossam and kalguksu spot near Sindorim, definitely stop by Sambaekga! 100% revisit for me.
