Seongsu AGU serves Korean dishes such as braised monkfish, savoury pancakes (jeon) and rice balls in a remodelled old house. The signature dish at Seongsu AGU, braised monkfish with fried tripe, is topped with Korean beef (hanwoo) tripe slaughtered the same day in Majang-dong, cleaned and fried crisp, while the braised monkfish itself is stir-fried quickly over the high flame of a Chinese-style wok burner. Seongsu AGU uses a stock simmered for 3 hours from anchovy, kelp, onion and radish, along with green-tea bean sprouts grown in first-grade water in Yeoju.
At Seongsu AGU, the gamtae seaweed and octopus rice ball is made with Korean gamtae ground fresh every day and shaped by hand as soon as it is ordered, and the pollack roe cheese potato pancake is made from julienned Korean potatoes with pollack roe and cheese, then pan-fried. Seongsu AGU replaces all of its fryer oil every week, and the kitchen is semi-open. On the first floor Seongsu AGU has regular seating and a private room, and on the second floor there are seats with a view outside.
