The Jokbal Sindorim opened in Sindorim in 2012 and describes its jokbal (braised pig's trotters) as hotel-style, made to a recipe developed by a chef with 30 years of experience who previously worked at the Chosun Hotel. The Jokbal Sindorim follows a 'three same-day rule': grade-1 domestic fresh trotters are received, boiled and sold on the same day, and after pre-treatment including ultrasonic cleaning they are simmered with 15 ingredients for about 3 hours. The Jokbal Sindorim says it aims for a savoury, nutty flavour rather than the strong herbal aroma of some jokbal.
Besides front-leg and hind-leg jokbal, The Jokbal Sindorim offers half-and-half jokbal in spicy and soy-garlic flavours, cold jokbal salad, fire-grilled spicy jokbal, bossam and set menus combining them, with fresh-fruit platter makguksu and mung bean pancakes on the side. As a standard side dish, The Jokbal Sindorim serves radish kimchi made in-house from Jeju winter radish and cold-aged for 48 hours.
