About

Wolhadong is a pork gomtang restaurant that seasons its soup with cheonggeunjang, a fermented sauce made by boiling, cooling, marinating and drying radish, based on methods recorded in the Joseon-era cookbooks Sanga Yorok and Suun Japbang. Wolhadong's broth is clear and radish-based, while the spicy Hong Gomtang gets its heat from a chili oil sauce (gochu yujang, 油醬). Wolhadong's Sambok (三福) hot pot contains beef shank (arong sataе), pork neck, chicken legs, vegetables and mushrooms, and porridge can be added once the hot pot is finished.

Wolhadong cooks its rice from a blend of Sindongjin rice, Koshihikari rice and barley, and makes its kimchi and seokbakji (radish kimchi) from Korean-grown napa cabbage, radish and chili powder. Wolhadong runs a separate fermentation room where it makes and stores its own pickles and sauces. Wolhadong has a hanok-style interior and serves food in tableware modelled on moon jars, and its 13-seat bar table makes Wolhadong easy for solo diners.
