The freshness was obvious the second I saw the meat laid out. The aged fresh pork belly had a nicely substantial thickness, and the sound of it sizzling as soon as it hit the grill made my mouth water.

The quality of the meat really did feel different, as you’d expect from a well-known Sangil-dong Station barbecue spot. A staff member grilled everything from start to finish, so all we had to do was sit back and eat.

How the staff-grilled pork belly and neck tasted

My favorite was the classic combination: starting with Himalayan pink salt for the meat’s natural flavor, then adding myeong-i namul (pickled wild garlic leaves), pickled onion, and garlic sauce. The bright, spicy pairing of mustard-leaf pickle, wasabi, and garlic sauce was perfect when we wanted something refreshing and punchy without any richness. We also alternated with the lighter combination of grilled white kimchi, pickled onion, and garlic sauce, which seemed to bring out the meat’s own flavor even more. Every pairing was delicious in a different way.

The steamed egg that came with the meal was wonderfully fluffy and puffed up, perfect to eat between bites of meat. Adding bowls of rice made it feel like a really satisfying meal. The kids loved the steamed egg so much that we even ordered another one.

The extra pork skin had that satisfyingly chewy texture, so it suited my husband and me perfectly since we already love pork skin. If I had to find one small downside, there was a bit of a wait because it was dinner time—but I suppose that also says how popular it is among Sangil-dong Station barbecue restaurants.
