I was worried about the smell and prep involved in grilling daechang (beef large intestine) at home. The Ieum Marinated Daechang Grilling Set I tried this time came pre-marinated with a sauce included, so there was not much to prepare separately.

How were the packaging and the product after thawing?
The package arrived neatly. The marinade was evenly coated over everything, so there was hardly any extra prep needed.

After thawing, there was hardly any sudden strong off smell. It felt well cleaned and prepared, and the layer of fat did not seem excessively thick either.

How were the smell and oil splatter when grilling at home?
I put the thawed daechang in a pan and grilled it. When I cooked it, I could barely notice the distinctive daechang aroma, and there was less smoke than I expected. It was not completely oil-free, of course, but it did not splatter excessively, so cooking it felt less daunting.

How did I grill it in the pan?
I grilled it slowly over medium-low heat, turning it now and then. Rather than burning quickly on the outside, it seemed to cook through gradually, so the grilling process was fairly easy. Once I cooked it to a golden brown, the outside was crisp and the inside pleasantly chewy.

What were the separate sauce and marinade like?
There was a separate dipping sauce in addition to the base marinade. I could add it to suit my taste, and for me, dipping the daechang in it brought out more of its nutty richness. It tasted a little different from eating it plain, so it was nice to alternate between the two.

The marinade was not overly sweet or salty; it was just enough to complement the daechang’s savory richness. The fatty, nutty flavor spread as I chewed, but it did not leave a heavy greasy aftertaste. The contrast with the chewy interior was even tastier when I crisped the outside slightly.

Was it good enough for a full meal?
It was cut into bite-sized pieces, so there was hardly any need to use scissors. It was easy to pick up with tongs, with a pleasantly springy texture rather than being tough. It also went well with rice, making it a convenient meaty meal at home.

It would work well as a drinking snack, too. Being able to keep it frozen and take it out whenever needed was convenient. I had hesitated to grill daechang at home because of the smell, but this time the odor felt manageable and cooking was relatively simple, so I was satisfied.
