Arriving right at opening, the writer ordered one serving of pork belly, one serving of the Insaeng pork neck, cheonggukjang (fermented soybean stew) and herring roe bibimbap, then tried the meat four ways: with salt, with herring roe, with minari (water dropwort) and with wasabi and ginger.
