Ingye-dong cutlet restaurant with tripe gopdori tang: Gyewondang

In short

Gyewondang Ingye Branch is a Japanese-style cutlet restaurant in Ingye-dong, Suwon, near Suwon City Hall Station, serving pork cutlet and a signature chicken cutlet made with 100% chicken thigh meat. This visit combined the crisp pork cutlet, the chicken thigh cutlet and gopdori tang (spicy chicken stew with beef tripe), which turned out to be the most memorable dish of the meal. The nutty, tripe-rich broth of the gopdori tang at Gyewondang Ingye Branch was still on the mind long after getting home.

A chicken cutlet spot AND a pork cutlet spot! A place that uses only 100% chicken thigh meat! I brought you a piping hot review, let's get started :)

How crispy is the pork cutlet at Gyewondang Ingye Branch, Suwon?

In Ingye-dong :) I stopped by Gyewondang, a great place to go when you're craving chicken cutlet and pork cutlet. I usually love both, so I went in with high expectations — and after eating, I got why so many people come here. First off, the pork cutlet's exterior was really crispy, so the texture was great from the very first bite. The breading wasn't soggy at all, it stayed crunchy, making a satisfying sound with every bite, but it wasn't so thick or greasy that it felt heavy either. The meat inside was moist and tender, pairing nicely with the crispy exterior, and with the sauce I just kept reaching for more :)

What does the 100% chicken thigh cutlet taste like?

The chicken cutlet made with thigh meat especially impressed me. I ordered it since it's supposedly the signature dish, and it was more tender and delicious than I expected. The chicken wasn't dry at all — moist and soft, satisfying with every bite! So good!!! Crispy outside, tender inside — a different kind of appeal from the pork cutlet, and personally, this is a menu item I'd definitely order again on my next visit. The combo of crispy batter and light, tender chicken was really great.

Gopdori tang: the most memorable dish of the meal

And if I had to pick the most memorable dish of the day, it's the gopdori tang (spicy chicken and beef tripe stew). Honestly, I went there for pork cutlet and chicken cutlet, and didn't expect the gopdori tang to be this good too — but one bite completely changed my mind. ㅠㅠ It's genuinely so delicious!! Especially when you mix it with rice!!!! The broth is rich and deeply savory, so I kept scooping spoonfuls, and with the chicken and tripe together, the flavor felt much deeper. It's spicy but keeps pulling you back in, pairs really well with rice, and would make an excellent drinking snack too. The tripe's distinct savory flavor added to the broth made it feel like more than just a spicy stew — it's a flavor that stays with you.

The pork cutlet was crispy, the chicken cutlet was tender, and the gopdori tang had a rich, deep flavor — each dish had a distinct charm. It's not a place that's just good at one thing; there's real enjoyment in picking through several menu items, which made the meal even more satisfying :) Sharing the pork cutlet and gopdori tang with the people I went with made me feel like we picked well. Above all, the taste of the gopdori tang kept coming back to mind even after eating. Even after getting home, I kept thinking about that broth and the savory tripe flavor, enough to want to go back for more.

Would I go back to Gyewondang Ingye Branch?

If you're in Ingye-dong looking for a crispy pork cutlet or a tender chicken cutlet, I'd recommend Gyewondang. Pair it with the gopdori tang and I think you'll find the combo satisfying and well worth it. The crispiness of the pork cutlet, the tenderness of the chicken cutlet, the rich flavor of the gopdori tang — every one of them stuck with me, and the gopdori tang especially was so good that it's still on my mind. I'm curious about other menu items for next time, but I think I'll order the gopdori tang again regardless. It's been a while since I had a meal that kept coming back to mind afterward, so it was a satisfying visit. Next time I'd like to recommend it to friends nearby and go together. I also liked being able to pick from several delicious dishes, and it felt like a comfortable place to eat. Next time I want to visit with more time to spare and slowly try each dish one by one. Definitely going back. Really satisfied. Will be back for sure. Highly recommend this true budget-friendly favorite!
