Hey everyone, Sunsun here with another gopchang (grilled beef intestine) review! Lately when I don't have much of an appetite, meat or sashimi are nice, but I often end up craving gopchang instead.
What kind of place is Uhwa Gopchang? A pojangmacha-style gopchang joint in Dunsan-dong
Uhwa Gopchang is an intestine restaurant on Daedeok-daero 195beon-gil in Seo-gu, Daejeon, serving not just gopchang but makchang and daechang too. Here's what the exterior looks like!
The outside has a bit of a street-tent (pojangmacha) feel to it.


Seaweed soup and tteokbokki before the gopchang arrives
At Uhwa Gopchang, a seaweed soup comes out before the gopchang, and honestly, this soup is so good. Gopchang and seaweed soup might sound like an odd pairing, but this place is genuinely great for seaweed soup... just trust me and eat it.

It also comes simmering, so you can keep eating it warm throughout the meal, which is nice.

And the tteokbokki (spicy stir-fried rice cakes) is spicy in a way that feels like a pre-emptive hangover cure before diving into the greasy gopchang and daechang. The rice cakes were chewy in just the way I like — looked like wheat-flour tteok. With such generous seaweed soup and tasty tteokbokki, it already feels like two meals in one haha.

Besides the grilled options, they also sell Korean beef gopchang hot pot. I'm planning to try that next time.

Inside Uhwa Gopchang: the side dishes and sauces
Here's what the inside of Uhwa Gopchang looks like — the floral wallpaper was memorable, and the tables had that pojangmacha vibe.


The basic banchan (side dishes) come out generously too. Especially this scallion kimchi — that was my kick. On top of that, wrapping the gopchang in perilla leaves and radish slices is pure happiness.

There are two sauces to choose from, plus an onion sauce on the side. I dipped into all three, taking a bit of everything.

Ice-cold draft beer and a highball
You can't have gopchang without draft beer and a highball!! And this isn't just any draft beer — it's an iced draft beer. Since I'm on a no-drinking streak for now, missing out on this iced draft and highball is a real regret, TT



One portion of beef gopchang, one of beef daechang for two people
Oh right, you order at Uhwa Gopchang using the kiosk next to the entrance. I came with a friend, and when I asked the owner, she said we could each order something different, so we got one portion of beef gopchang and one portion of beef daechang.

The liver and tripe come as a complimentary service too — just dip them in the sesame oil sauce that comes out with them.

And here's the one portion of gopchang and one portion of daechang that arrived!

Here they are partially cooked and cut up — looks so good, right? They also come with a wide variety of extras: kimchi, bean sprouts, potato, garlic, chives, and even rice cakes~!

Did the gopchang or daechang taste gamey? Not at all
Listening to the sizzle of gopchang cooking away really works up an appetite. I'm already drooling just writing this lol.
Here's a shot of me holding up a piece of gopchang — the inner fat was savory and delicious, and most importantly, there was zero fishy taste. I only have the overall shot of the daechang, but daechang can easily turn out fishy, and here there wasn't a trace of it. If anything, the gopchang and daechang worked really well together. Eat some daechang, then some gopchang... haha, endless loop~!

You can see the fried rice comes with egg mixed in and a generous sprinkle of seaweed flakes on top.

Then you wait for the fried rice to crisp up golden on the bottom of the hot plate haha.

I just can't eat gopchang without finishing with fried rice. The pairing of gopchang and fried rice is always great, no matter how many times I have it. If the fried rice is missing, it feels like the meal wasn't quite finished.
