Weekday 4pm wait times and sold-out bread
I visited Bakerist Brown around 4pm on a weekday and there was no wait. A wide variety of breads were out, and the cookies could be bought by type.
On weekend afternoons or at peak times, some bakery items may be sold out, but I heard a wide range is usually available around 4pm. Takeout is also possible.
Atmosphere on each floor of Bakerist Brown
Bakerist Brown is a big Gangnam café that uses a whole building. Inside, it has a vintage feel, and you can use floors 1 through 3, each with a slightly different mood.

The first floor has ordering and the bakery showcase, with pastries, salt bread, cookies and more on display, so browsing is fun. The second floor has white walls and floor-to-ceiling windows that let in natural light, and the varied seating made it easy to pick the table I wanted.
Maybe thanks to the natural light, photos come out pretty, and it's a relaxed place to chat over coffee. It suits a solo visit, and it also fits a get-together with friends, a blind date or a meeting.
How to order bakery items at Bakerist Brown
At Bakerist Brown, you pick your bread yourself at the bakery corner and then pay.

Part of the fun is looking, because there are breads with designs you'd see on Instagram. There are animal-shaped breads and even ones topped with a chocolate coating like a waxy ball, all cute and full of personality.

There's a wide range of pastries, and I heard the bakery uses French butter and makes everything by hand, which is why it's a go-to pastry spot near Gangnam Station.
I heard popular items include the pollock roe salt bread, the mango croissant and the cream coffees. Even without toppings or jam, the pastry had a subtle buttery flavor and a texture where the layers really stood out.
What I ordered: salt cream coffee, pastry loaf, Gangnam Sand cookies

How does the iced salt cream coffee (₩7,800) taste?
The salt cream coffee (iced) at Bakerist Brown is ₩7,800. I heard the cream latte is one of the signature drinks, so I ordered it. The cream layer is thick and pretty to look at, and it's pleasantly sweet, so the balance was good.
It's topped with rich, smooth cream, and a touch of salt seemed to bring out the coffee flavor.
Mixed well, the sweetness and nuttiness come together.
Animal-shaped pastry loaf

I picked up the pastry loaf (shokpan-style bread) because of its cute look. The loaf, which looks like an animal, has pastry layers visible even on the outside.

It was nutty even plain, and with jam it could easily stand in for a meal. A subtle butter aroma rises up, so it goes well with coffee too.
What flavors do the Gangnam Sand cookies come in?

Bakerist Brown also sells Gangnam Sand cookie sets (sandwich cookies). The flavors listed in the original post are:
Matcha & cream · Cheese peanut & butter · Black sesame & cream · Caramel & white chocolate · Earl Grey & white chocolate · Chocolate & cream
With so many flavors you can pick to your taste, and collecting them one by one makes them look like a gift set. With a latte, Earl Grey & white chocolate was just right for me.
The distinctive Earl Grey flavor pairs well with the sweetness of white chocolate.
Bought as a set, the colors are pretty, so it looks like a good Gangnam dessert gift, say for a housewarming or a visit to someone's office. The first floor also has a waiting area where you can sit while your takeout is packed.
