Dojeok Suwon is a Korean BBQ restaurant located near the center of the Nahyeseok-geori food alley in Inge-dong, Suwon. With 20 years of history, 'Dojeok' is a true Inge-dong institution with longtime regulars not just from Suwon but from nearby Osan, Yongin, and Dongtan too.

A rich, comforting doenjang jjigae (soybean paste stew) is provided free. With tofu, zucchini, and clams, the deep, clean flavor is excellent. The basic table setting is so generous and thoughtful, it warms the heart too

Oiling the grill nice and thorough

Each serving of pork jowl and knife-cut pork belly is 180g, quite a generous amount. They place the fatty part on the stone grill first so the pork fat can coat the whole surface. Heh, that's a pro move.

What was so convenient about reserving ahead was that the stone grill was already pre-heated, so the meat cooked super fast!

They swap out the grill plate cleanly from time to time and pay close attention so nothing burns. Both the owner and staff are extremely friendly overall!

No need to even mention the pickled onion sauce — it vanishes the moment it hits your mouth,

The special sauce the owner makes himself

This sauce especially!! I really recommend it! It's not sour like chojang (vinegared gochujang), and it doesn't have the heavy, gritty texture of gochujang either. A flavor I'd never tasted before, yet somehow familiar and addictive. It pairs perfectly with fatty pork belly or jowl — if I had to compare it to something, it's spicy with just a touch of sweetness... kind of like spicy dakgangjeong (fried chicken) sauce

It was so good I asked the owner, and turns out they make it themselves! Wow... such an addictive flavor. So good!

While they took the grill away to clean it thoroughly, I zoned out staring at the charcoal fire...

After a first sear at the table, the owner takes it away and cuts it into easy-to-eat pieces.

Then back on the grill to cook until golden brown. Grilling kimchi together in the pork belly fat is a knockout combo.

A pinch of salt and pepper! Good meat really shows its strengths when eaten classic style. No gamey smell, great flavor.

Mmm~ crispy outside, moist inside. The sweet potato is even better dipped in the special sauce, haha

Gochujang pork belly, 180g for 16,000 won: order it last for the grill change

The gochujang pork belly is marinated in a sauce the owner makes by hand! They told us it's the same base as the red special sauce I raved about earlier. So... it's guaranteed to be delicious. A flavor you can trust.

Marinated meat tends to either burn or undercook — one or the other — so it's a dish I'd hesitate to order myself, but the owner grills it with such skill that you can just sit back and receive it perfectly cooked

Isn't it a universal rule that marinated meat tastes better with a slight char?

Wrap time!!! Oh yeah!!! So good. This one has a bit of a jeyuk bokkeum (spicy stir-fried pork) vibe!? If the dipping sauce was a bit spicy for the sauce (tough for spice-wimps to handle), the gochujang pork belly wasn't spicy at all and was just right — deliciously balanced!

Mmm~ it also pairs great with soybean powder and pickled onions. Gochujang pork belly is a dish I'd recommend as a drinking snack!

Finishing with bibim guksu at 7,000 won

Bibim guksu, ₩7,000. Time for a real meal now, right? Skipping dessert is basically... illegal, isn't it?

They're really generous with portions haha — the noodles underneath are so plentiful you can barely see them under the perilla leaves and lettuce.

Wow~ so good!! Tangy, sweet, spicy! Chewy noodles~ the fragrant perilla aroma and crunchy cucumber texture come together for a rich flavor — honestly a perfect 100 dessert dish, highly recommend!
