The stew could be either kimchi stew or soybean paste stew, and we picked kimchi stew. It was a great set to order if you want to try several cuts and sides at once.

On top of the cauldron lid, along with the meat, came a whole assortment of vegetables — kimchi, bean sprouts, water dropwort, bracken fern, enoki mushrooms, king oyster mushrooms, and peppers. It wasn't just meat the whole time; I liked being able to alternate with various sides.

The Gyodae Station pork belly was thick, with lean meat and fat evenly layered. It browned nicely on the wide cauldron lid, the fat spreading naturally, and the mixed vegetables cooked alongside it looked even more appetizing.

Best of all, the staff grilled everything from start to finish, which made it easy. They watched the order and doneness, cut it into bite-sized pieces, and kept turning the mixed vegetables too.

The pork neck was thick but not too dry, and the pork jowl was chewy with a distinct nutty flavor. The pork belly had a good bite, and each cut had a different texture, which made alternating between them fun.

We popped the egg yolk on the beef tartare and mixed it through evenly. It was savory yet tender, with seasoning that wasn't overdone — perfect to nibble on between rounds of grilling.

Eaten with crisp pear, the added texture kept me reaching for more.

Next, the kimchi stew arrived, bubbling hot.

It was generously loaded with tofu and kimchi, and taking a sip of the spicy broth between bites of meat cleaned my palate right up.

Once we finished the Gyodae Station pork belly, we wrapped up with fried rice. The leftover vegetables and kimchi on the cauldron lid were chopped fine and fried together with rice. Topped generously with seaweed flakes and a fried egg, it looked amazing.

Breaking the yolk and mixing it into the fried rice softened the spiciness. The crispy scorched bits stuck to the wide cauldron lid were nutty and crunchy, and I kept going back for more. Even though I was pretty full, we cleaned the pan to the very last bite.
