Diced flower short rib (kkotsal)

At Uno the staff grill the meat for you, so you can just relax and eat! The diced flower short rib is apparently a flower short rib cut, with a tender texture and just the right amount of fat, so I loved it dipped in nothing but salt.

Myeongi namul (pickled wild greens) and scallion salad come as side dishes, and eaten together the combo is amazing. They cut right through the richness!

At Uno, the staff take the bones out of the LA galbi one by one. Isn't that service awesome?

No fuss with picking the meat off the bone yourself, you just enjoy the meat. Loved it, haha

Beef tongue, lightly grilled with lemon sauce

If it's your first time having beef tongue, don't cook it all the way through. Grill it just briefly and dip it in the lemon sauce! Ahh, this is the real treat. Dipped in the tangy lemon sauce, it's clean with no greasiness!

Marinated flower short rib

The marinated flower short rib is the textbook sweet-and-salty. It comes out as the last hitter, and you'll eat it even when you're full.

Doenjang stew (on the house)

Uno normally gives sunji (ox blood curd) on the house, but there was none that day, so they swapped in doenjang stew (soybean paste stew). I actually can't eat sunji, so I liked the stew better!

Hanwoo yukhoe bibimbap (beef tartare rice bowl)

The hanwoo yukhoe bibimbap I ordered at the end was totally filling and delicious! The vegetables were well seasoned too.

And they even gave us shaved ice on the house! It's old-style bingsu, so it felt nostalgic, haha. Cold shaved ice after the meat is the perfect finish.
