Sokcho bakery egg tart frozen for ice cream filling: Doris Patisserie
In short
Doris Patisserie is an egg tart bakery on Jungang-ro 147beon-gil near Sokcho Central Market in Gangwon. Two boxes of original egg tarts were reserved by text at 6am the day before and picked up at 3pm on a Sunday, and freezing the tarts and reheating them in the oven at 180°C for 4 minutes beat eating them fresh on the day. The shell turns crisp again while the egg filling goes thick and cold like ice cream, which is the surprise that makes a Doris Patisserie egg tart worth the reservation.

Doris Patisserie (도리스파티세리) is located near Sokcho Central Market, so it seemed really good for taking home too. If you're looking for food at Sokcho Central Market, you have to visit haha! So good•• the filling is packed full.
How to reserve egg tarts at Doris Patisserie, and one tip that helps

We visited after reserving two boxes of original egg tarts in advance. I liked that if you reserve ahead here, you're guaranteed to get them, so you don't have to wait in line at all.

Reserving by text from 6am the day before
It's a system where you must text starting at 6am the day before you want to buy. You send a text choosing your pickup date / pickup time / menu and quantity, the store replies, and that confirms your reservation.
One thing that might be confusing! You can add a few other desserts alongside one box of egg tarts, but you can't fill a box of 6 with different egg tart flavors mixed together. Just keep in mind you can only buy by the box.
A reservation tip for popular pickup times
I was worried I might miss out if it got busy, so I sent my text reservation right at 6am the day before pickup. That brings the chance of missing it down to 0%!! Haha. But I heard from others that they got reservations even sending texts a bit later. Guess it's not as brutally competitive as I thought.
What a 3pm Sunday pickup at Doris Patisserie is like
I went 30 minutes early worried about crowds, but there wasn't a single group there. Then when I went back around 2:57, suddenly there were 3 groups. And right after me, a long line formed. If you don't want to wait, standing there about 5 minutes early seems like the sweet spot!
Oh, and for those buying two boxes of different flavors!! The flavor of the box next to yours is marked on the side, so definitely check that ㅠ

Reservations are confirmed by the last digits of your phone number, and before pickup time the door was completely locked.
Inside and outside the Doris Patisserie shop

It stands right out near the market. A pink building!!
Inside is cozy and small.
What the original egg tart tastes like

I finally got them and ate one right away in the car — warm, crisp, so delicious ㅠㅠ There's a reason it's called a Sokcho egg tart place.

You really taste the rich butter flavor, and the egg filling inside is just insane. It's packed with way more filling than other egg tart shops, so with one bite the soft, sweet flavor hits you right away.
How to store and reheat Doris Patisserie egg tarts

- Method 1. Eat the same day
- 2. Refrigerate for up to 2-3 days!
- 3. Freeze then oven/air fryer — Oven 180°C for 4 minutes: inside stays cool, outside crisp / Oven 180°C for 9 minutes: filling also warm and crisp
Eating it fresh the same day is the crispest and warmest and most delicious, but it was really, really good after being refrigerated too! But since I bought 2 whole boxes, I tried it every which way, and it turns out I had a favorite method haha.

Freeze it right away, then bake in the oven at 180°C for about 4 minutes! The outside goes crisp again while the inside stays cold, so the egg filling feels dense like ice cream — and it's genuinely delicious. This method was actually my favorite.
