Where is Chodaechang Byeollae Branch, and what cuts can you eat?
Chodaechang Byeollae Branch (초대창 별내점) is on the first floor at 12-18 Byeollae 5-ro 5beon-gil, Namyangju-si, Gyeonggi-do. The menu included daechang (beef large intestine), makchang (beef abomasum), and teukyang (beef tripe), and I enjoyed the contrasting textures of daechang and teukyang. It was nice to alternate between the rich, tender flavor and the lighter, chewy flavor.
Do staff grill the beef offal for you?
When I visited, a staff member grilled everything directly through to the end. Since the texture changes depending on how it is cooked, it was comfortable to simply enjoy the meal. I waited while watching the meat turn golden on the grill and taking in its savory aroma.
How did the daechang and teukyang differ in flavor and texture?
I ate the daechang after it had been cut into bite-sized pieces and cooked thoroughly. It was lightly crisp outside, moist and tender inside, with a deep savory richness as I chewed. The sauces and side dishes served with it helped cut through the richness. It also paired well with the spicy seasoning.
The teukyang focused more on a light, chewy texture than a fatty flavor. It was not overly tough, and became more savory as I chewed, making it good to eat between bites of daechang. Alternating the two cuts kept the meal from becoming tiresome.
The basic side dishes also went well with the grilled meat. Pairing daechang with a sour or crunchy side dish left my mouth feeling refreshed. It was enjoyable to switch between the sauces and side dishes.
How was it for a family meal or a gathering with friends?
The atmosphere suited a family meal, dinner with friends, or a drink after work. The rich flavor of daechang and the lighter texture of teukyang differed enough that it worked well with companions who had different preferences. It also seemed suited to a relaxed meal spent talking around the table, a date, or a work dinner.
What did I have to finish the meal, and was there a wait?
During my visit, I received kimchi mal-i guksu (cold noodles in kimchi broth) through a review event. It was cool and tasty, making it a good finish after the grilled offal.
I also enjoyed the yang bokkeumbap (fried tripe rice). However, it took a little time to arrive after ordering. If you plan to have it as part of your meal, it may be better to order it in advance.
