Sokcho market salted seafood: 1kg white roe, butter-grilled, Hwangbuja

In short

Hwangbuja Jeotgal (황부자젓갈) is a salted seafood (jeotgal) shop inside Sokcho Jungang Market (Sokcho Tourism & Fish Market) in Sokcho, Gangwon. The writer took home 1kg of white pollock roe from Hwangbuja Jeotgal, was surprised that each piece was as big as a palm, wrapped the pieces one by one in cling film to freeze, and made butter-grilled pollock roe for a home izakaya night. With big white roe and careful packing down to the ice packs, Hwangbuja Jeotgal's 1kg of roe was a buy worth keeping and enjoying long after the trip.

Why buy 1kg of white pollock roe at Hwangbuja Jeotgal in Sokcho Jungang Market?

I picked up 1kg of white pollock roe (baengmyeongran-jeot) at Hwangbuja Jeotgal (황부자젓갈) in Sokcho Jungang Market. The shop opens at 8 am every day and closes at 8:30 pm.

Jeotgal (salted seafood) is one of the things I always bring back from a Sokcho trip ^^ I really love white roe and always keep a stash in my freezer. This time I stopped by Hwangbuja Jeotgal, known as a go-to jeotgal shop in Sokcho Jungang Market, and took home 1kg of white roe ^^

How does Hwangbuja Jeotgal pack 1kg of roe?

Hwangbuja Jeotgal neatly placed the 1kg of white roe in a container, tied it in a plastic bag once more, and added an ice pack and a cooler pack. Even though the trip home was long, I could bring it back fresh.

1kg is quite a lot, but they arranged the roe carefully in the container so it wouldn't burst, and tied it in a bag once more so no brine would leak ^^ With an ice pack and a cooler pack on top, I felt safe the whole way home. Befitting a top jeotgal shop in Sokcho Jungang Market, even the packing was thoughtful, which made me happy. The trip home was long, but they made sure it stayed fresh, and that gave me confidence ^^

How big is Hwangbuja Jeotgal's white pollock roe, and how does it taste?

Each piece of Hwangbuja Jeotgal's white roe nearly filled a palm and was packed with roe. When I opened the package at home, the size surprised me all over again.

When I picked one up, it nearly filled my whole palm, big and plump. It looked so fresh that my mouth watered just looking at it, and I was really happy with the quality.

The biggest plus of white roe is that it's lower in salt than regular salted pollock roe, so it isn't too salty and has a clean, savory depth. It's delicious just placed on warm white rice and works in lots of dishes, so I buy it often as a side dish. The white roe I bought this time at Hwangbuja Jeotgal was big and full of roe, and I loved it!

How to store 1kg of white pollock roe so it keeps

I wrapped the 1kg of roe piece by piece in plastic wrap, put it in zip bags and froze it, keeping only what we'd eat soon in the fridge. It's handy because I can take out one piece whenever I want.

There was plenty, so I wrapped each piece in Glad Wrap and froze them in zip bags. Portioned like this, I can take out one whenever I feel like it, which is so convenient! Keeping just the amount we'll eat soon in the fridge should let us enjoy it fresh for a long time ^^

White roe divided between fridge and freezer storage

Rather than refrigerating all the roe at once, portioning it and freezing it keeps the fresh flavor longer. Thawing one piece at a time barely changes the taste and makes it easy to use in all kinds of dishes, so this is how I always store it ^^

Butter-grilled white pollock roe for a home izakaya night

I made butter-grilled roe with Hwangbuja Jeotgal's white roe and served it with cucumber and mayonnaise. Grilled in butter, it got rich and savory, and my home turned into a home izakaya (Japanese-style pub).

I couldn't wait, so I made butter-grilled roe right away, and it was the best. Lightly seared in butter, the salty umami came alive even more, and with crunchy cucumber and mayonnaise it became a fancy snack that could rival most izakayas!!! Hahaha. That day, our home was a home-zakaya.

Besides butter-grilled roe, there are so many ways to use it that you never get tired of it. It's great with drinks and also works as a simple side for rice, so if you stock up in the freezer you can make a tasty meal anytime ^^

  • Roe rolled omelet
  • Roe pasta
  • Roe rice balls
  • Roe bibimbap (mixed rice)
