Corkage-friendly Hongdae cocktail bar: rosé sparkling at Bitters

In short

Bitters is a basement cocktail bar on Hongik-ro in Mapo, Seoul, a minute from Hongik University Station, where bar seats are the main seating and guests watch the bartender mix drinks up close. The order was gambas, tortilla chips and honey cream cheese crackers with a glass of abbazia rose dolce, and the sweet cracker with the rosé sparkling was the best pairing of the night. Bitters stays quiet even in the middle of noisy Hongdae, allows corkage, and opens 19:00 to 02:00, so it suits dates, friend meetups and solo drinks alike.

When you're looking for a good-atmosphere bar in Hongdae, there are honestly so many choices you get more indecisive. On one of those days, when I wanted a quiet conversation and a proper cocktail, Bitters came straight to mind. It's a quietly word-of-mouth spot among Hongdae cocktail bars, so I went in with high hopes 😊

Down to the basement: the entrance and bar seats at Bitters

Bitters is a cocktail bar tucked in the basement of a building on Hongik-ro. The entrance felt a little hidden at first, so I second-guessed whether I had the right place — but that turned out to be part of the charm. Follow the signs down to the basement and the lighting shifts completely, and suddenly the atmosphere comes alive.

Since bar seats are the main setup, I got to watch the bartender mix cocktails right in front of me, which was oddly relaxing. Even though we were in the middle of loud Hongdae, the inside was pretty quiet, so I thought it'd suit dates or genuine drink lovers really well.

What we ordered at Bitters

1. Gambas

The first thing we ordered at Bitters was gambas. It already won me over just from the visual — a pan piled high. It came out with the olive oil still bubbling, and the garlic smell hit first, making my mouth water automatically.

The shrimp were bigger than I expected, and biting into one gave a bouncy texture with the savory flavor spreading through my mouth. I thought it'd just be greasy, but the garlic and herbs blended so well that there was almost no heaviness — if anything, it was a flavor I kept reaching for. Dipping the baguette right after brought out the shrimp aroma soaked into the oil perfectly.

2. Tortilla chips

The tortilla chips that came after the gambas were easy, light to snack on. Picking up a chip, you'd hear the crunch first — the texture was really alive — and it was clean without any oily smell, so it felt effortless. It was especially good as a palate cleanser between cocktail sips, so I kept going back for more. It wasn't sharp-tasting, so it paired well alongside the gambas too.

3. Honey cream cheese crackers

Personally, the most memorable dish was the honey cream cheese crackers. Cream cheese piled generously on top of a cracker — the first bite brings savoriness, then the subtle sweetness of honey spreads right after. The cheese wasn't too heavy, so it felt like it melted away in the mouth, making it a perfect pairing with drinks. If you only eat salty snacks you get tired of it fast, so having something sweet like this on the menu balanced things out nicely 😌

4. Abbazia rose dolce rosé sparkling

The last thing we drank, abbazia rose dolce, was the glass that completed the mood. The color in the glass was gorgeous — that rosé hue — and I found myself just taking in the aroma first.

One sip brings sweet fruit notes first, and the alcohol content is relatively low, so it was easy to enjoy without pressure. The sweetness wasn't overdone so it paired well with the food too, especially good alongside the honey cream cheese crackers. Since it's an easy pick even for people who don't drink much, I thought it'd work well for a date too.

Final verdict: a Hongdae cocktail bar for solo drinks and dates

Overall, Bitters had the three elements — atmosphere, snacks, and drinks — all lined up well. It's great for a quiet space where you can talk and drink slowly, so I'd especially recommend it to anyone looking for a cocktail bar in Hongdae.

Every single snack felt like it had real care put into it, and the way the food paired naturally with the drinks was impressive. It seems like a space that would suit dates, friend gatherings, and solo drinking alike, so it's worth remembering. Plus, corkage is allowed, so definitely give it a visit :)
