Bupyeong Yang Gopchang is an old-school offal restaurant with outdoor street-stall seating in the yang gopchang alley near Jagalchi Station in Jung-gu, Busan. After a 30-minute wait for an outdoor table on a Friday evening, two people shared a small yang-daechang jeongol (beef tripe and intestine hotpot) for 40,000 won plus a udon noodle add-on for 2,000 won, and the offal had no gamy smell while the spicy-sweet broth stayed clean rather than heavy. For anyone who prefers soup over grilled meat, the hotpot is the right order at Bupyeong Yang Gopchang.
