Jung-gu Busan offal hotpot after a 30-minute Friday queue: Bupyeong

In short

Bupyeong Yang Gopchang is an old-school offal restaurant with outdoor street-stall seating in the yang gopchang alley near Jagalchi Station in Jung-gu, Busan. After a 30-minute wait for an outdoor table on a Friday evening, two people shared a small yang-daechang jeongol (beef tripe and intestine hotpot) for 40,000 won plus a udon noodle add-on for 2,000 won, and the offal had no gamy smell while the spicy-sweet broth stayed clean rather than heavy. For anyone who prefers soup over grilled meat, the hotpot is the right order at Bupyeong Yang Gopchang.

One of my recent obsessions is hunting down restaurants that keep popping up on my feed! This time I stopped by Bupyeong Yang Gopchang, a famous spot in Nampo-dong, specifically to try the jeongol (hotpot) it's known for. The weather's finally warmed up enough for outdoor tent dining (yajang), which made it perfect timing haha.

Long Friday evening queue along the yang gopchang alley

Where is Bupyeong Yang Gopchang, and how long is the Friday evening wait?

Bupyeong Yang Gopchang sits near Jagalchi Station in an alley packed with yang gopchang (small intestine), daechang (large intestine), and makchang (rectum) restaurants. It's a great spot for a date or a night out with friends, so it's always crowded whenever the weather's nice.

Being a Friday evening, the wait was no joke — over 30 minutes. I wandered around checking out the other restaurants nearby so it wasn't too boring, but watching everyone else eat while I waited just made me hungrier lol.

If you skip the outdoor tent and go indoors instead, the wait is much shorter — most people waiting are specifically there for outdoor seats, which is why the line looks so long. If you hate waiting, you can get seated indoors pretty quickly.

What two people paid: small hotpot 40,000 won plus 2,000 won udon

The signature dishes are salt-grilled offal, stone-pan seasoned offal, and yang-daechang jeongol. The two of us ordered a small jeongol plus an udon noodle add-on.

  • Udon noodle add-on ₩2,000

The price felt on par with other places in the alley, and the portion seemed generous for the cost. A side of doenjang jjigae (soybean paste stew) came out first, so we'd already cracked open a bottle of soju with the stew and sundubu (soft tofu) before the main dish even arrived 🍾

How does the yang-daechang hotpot taste? Seafood, glass noodles and pre-trimmed offal

The moment the jeongol arrived, it gave off this savory aroma! Inside were fresh seafood and glass noodles. The ajumma (auntie) had already trimmed everything into bite-sized pieces for us, so we didn't have to touch anything ourselves.

The jeongol wasn't super spicy — it had just the right amount of heat that even people who can't handle spice could manage. The longer it bubbled away, the more the offal's savory flavor seeped into the broth. Umami: 100 points! The offal itself was chewy yet tender, with zero gamy smell. Eating it with the broth basically maxed out my soju intake that night haha.

Udon noodles soaked in the jeongol broth

Halfway through, we threw in the udon noodle add-on, and the springy noodles soaked up the spicy broth beautifully — it was the delicacy of delicacies. Looking around at other tables, most people were eating either the stone-pan seasoned offal or the jeongol. We're soup people, so we went with jeongol, and I'm so glad we did.

Why the broth never feels greasy: the seasoning

The real secret behind Bupyeong Yang Gopchang seems to be a seasoning that finishes clean without any heaviness. The rich, spicy-sweet sauce is addictive enough that I kept spooning up broth even when I was full. Gopchang jeongol can easily turn greasy if it's made wrong, since offal is naturally fatty. But here, there's a garlic note and the chili powder seasoning is balanced just right, making it the kind of flavor you'd want to mix into rice. We ended up scraping the broth clean but were too full for the fried rice haha.

Close-up of a plump piece of offal

I picked up a piece of thoroughly cooked offal from the shallow, simmering broth — it was white inside and plump, the kind of visual that makes your mouth water just looking at it lol. I'll say it again: no gamy smell on the offal was such a huge plus. Chewy at first bite, then the savory fat melts across your whole mouth — that's when you know it's really good, right? With the spicy, sticky sauce clinging thick to the surface, the savoriness and spiciness kept taking turns hitting me, and it was seriously 👍. Thanks to that melting texture following the chewiness, my chopsticks never stopped moving.

Would I return to Bupyeong Yang Gopchang? What makes it easy

While we waited, the owner kept checking the line and headcount so the wait didn't feel too uncomfortable. I expected to wait at least an hour, so getting seated faster than that was a nice surprise. They also kept the gopchang jeongol pre-trimmed and easy to eat, checking in on us throughout the meal. And the restroom being inside the restaurant kept things feeling clean.

200% would come back! I think Bupyeong Yang Gopchang will be my go-to next time I want outdoor tent dining in Nampo-dong haha. Thanks for the meal :)
