Since I recently moved to Bongdam, Hwaseong, I've been having so much fun exploring hidden gems tucked into every corner of the neighborhood. Last weekend, I heard there was a jewel of a Japanese restaurant not far from home, in the alley in front of Suwon University, that catches both your eye and your appetite — so my partner and I went to check it out. It's Sindong Lab Hwaseong Bongdam Branch, a place constantly experimenting with trendy Japanese dishes like mazesoba, gyukatsu, and sukiyaki.
Even though we'd booked a reservation right at opening time, the front of the restaurant was already packed with people waiting for the opening rush. Let's dive right in!

The care they take with waiting customers is next-level. We arrived right for the first weekend lunch seating, and there was already a line in front of the restaurant before opening. The inside filled up quickly too.

How Sindong Lab grew from a 20-square-meter shop
Walking inside, the interior is so fresh and clean, isn't it? In 2016, the owner couple started out in a tiny 20-square-meter shop, carrying their newborn daughter on their back to soothe her while they worked. Since their daughter had to eat every meal at the shop, they researched cooking day and night, wanting to feed her the healthiest, tastiest food in the world. The dishes they came up with earned a devoted following, turning them into a must-line-up restaurant in Bucheon, and they eventually expanded and relocated into what is now Sindong Lab.


To keep the taste and quality consistent, Sindong Lab refuses to franchise indiscriminately and insists on running only directly managed locations! We were shown to our seats. Let's get to ordering. (Aren't the little props on the table so cute?)
Pre-meal soup and welcome tea arrived first.
First! We ordered the gyukatsu + ricotta cheese salad we'd really been wanting to try.






Wow, how am I supposed to want everything on the menu? It took us forever to decide.


There's a variety of spices at each table too, and the hand-washing area is neatly kept, showing real attention to hygiene before and after the meal.
Sukiyaki set, 14,900 won


The sukiyaki set arrived first. It's ₩14,900. Served on a neat tray with a personal tabletop burner and pot, the sukiyaki looks impressive right away — fresh bok choy, green onion, and mushrooms are packed in, along with thinly sliced beef.
Once the sweet, savory secret soy broth starts drawing out the sweetness of the vegetables and the juices from the meat...
...you scoop out the perfectly cooked meat and vegetables and dip them into fresh raw egg, and it coats your tongue in a soft, rich, savory flavor. It really was the taste of authentic sukiyaki, warm and filling.

There's also rice tucked below the vegetable compartment, so you can enjoy a satisfying finish to the meal.


Jumbo gyukatsu with ricotta cheese salad, 21,900 won
Next was the jumbo gyukatsu + ricotta cheese salad, priced at ₩21,900. A thick, generous beef cutlet came out piled onto a cutting board. Grilled lightly to your taste on the personal mini burner and popped in your mouth, the crispy coating gives way to juicy, tender beef that bursts with flavor!
Doesn't the visual just kill it? Grilling the gyukatsu on the personal burner with a bit of butter fills the whole space with a savory aroma. Add a touch of wasabi to the well-grilled gyukatsu, and it hits a peak of clean, nutty flavor you never get tired of! The ricotta cheese salad served alongside was also incredibly fresh!

Traffic-light cream udon nabe, 12,900 won
Next up: traffic-light cream udon nabe, priced at ₩12,900. The name alone got us curious, and the moment it hit the table, we understood exactly why it's called that!

The smooth, savory cream base is balanced out by a variety of toppings that keep it from getting too rich, giving it an addictive quality you never tire of. Wow — this was truly the best cream udon ever. How can it have such a rich aroma? My partner and I kept marveling as we scraped up every last strand. Haha.

So we ended up eating a generous spread of three dishes total. It was a happy lunch date on a beautiful autumn day with such pretty skies.
A bowl that carries the warm sincerity of the owner couple's love for their child, through and through! A place that made both our eyes and mouths happy — the number one Japanese food lab in Bongdam, Hwaseong!
