Pyeongchon Station pho restaurant, no break time solo set: Pho Witch

In short

Pho Witch is a sibling-run Vietnamese pho restaurant on the Pyeongchon food street (Gwiin-dong Meokgeorichon) near Pyeongchon Station in Anyang, Gyeonggi. At Pho Witch the writer ordered the Solo Pho & Fried Rice Set (Siblings' Sincere Pho plus pad thai fried rice) with extra noodles, a Banh Mi Crazy and a cider: the clean, savory broth, the sweet-and-spicy pad thai fried rice and the well-stuffed banh mi were all satisfying. Open every day with no break time, Pho Witch is an easy Pyeongchon pho stop whenever a craving hits.

What I ate at Pho Witch: the pho and fried rice set and Banh Mi Crazy

The food Pho Witch provided was the 1-person pho and fried rice set (Siblings' Sincere Pho plus pad thai fried rice) with extra noodles, a Banh Mi Crazy (Banmi Chyeottda) and a cider.

How is the Siblings' Sincere Pho? Beef belly and brisket with extra noodles

Siblings' Sincere Pho is Pho Witch's pho with beef belly and brisket, and the broth was light yet so deeply savory. It came with a generous pile of bean sprouts too.

The brisket had a clean, mild texture and the beef belly was chewy and tasty. The bean sprouts were crunchy and plentiful, and with the extra noodles there was even more food. The noodles were chewy too, and I slurped them down happily. It's been a while since I had pho this good, it's the best! It was so tasty I didn't need to season it at all. If you come to Pyeongchon Station in Anyang, please try the Siblings' Sincere Pho at Pho Witch. I drank the broth down to the last drop.

Is the pad thai fried rice big even as part of a set?

When you order Pho Witch's pad thai fried rice as part of a set, the portion shrinks a little, but it's still big. The flavor is just like pad thai noodles, spicy and sweet.

The rice grains were well coated, so after one bite I was hooked, and the savory depth was so good. The pineapple was tangy and tasty too.

Banh Mi Crazy, Pho Witch's Vietnamese sandwich

Banh Mi Crazy (Banmi Chyeottda) is Pho Witch's banh mi, a Vietnamese sandwich. The bread was crispy, the meat was sweetly seasoned and tender, and the crunchy vegetables were fresh, so it was so good.

It was packed full, and I happily ate every bite. If you want cilantro, they'll add it on request.

Side dishes and wrapping up

The side dishes at Pho Witch are pickled radish and pickled onion. The tangy pickled onion goes so well with the pho. I finished with the cider, and I was so full and happy.
