How does the lunch wait at Sushi Doku The Songdo work?
Sushi Doku The Songdo has a wait at lunchtime, so I registered on the Catch Table device at the entrance. When I visited, 10 teams were ahead of me.
I was craving sushi for lunch, so I went to Sushi Doku The Songdo near Tekeunopakeu Station in Songdo, Incheon. The place gave me a nice, clean impression overall.
According to the notice, when you reach 3rd in line you get a KakaoTalk check-in message, and you must press confirm or your wait is cancelled. If you aren't there when called, you're automatically skipped to the next, so it's best to wait right in front of the shop. Dogs aren't allowed, and strollers and carriers are restricted.

Sushi set menu and prices at Sushi Doku The Songdo
The sushi sets at Sushi Doku The Songdo are the Standard Sushi Set ₩19,900, Premium Sushi Set ₩25,900 and Special Sushi Set ₩35,900. There's a good variety of sets.

The themed sets are the Salmon Sushi Set ₩26,900, Flatfish Sushi Set ₩27,900, and Flatfish and Salmon Sushi Set ₩28,900. Udon, sashimi and a kids' menu are listed separately. The Premium Sushi Set looked the most varied, so I ordered that.
What comes with the Premium Sushi Set?
The Premium Sushi Set's main attraction is 10 pieces of sushi: flatfish, sea bream, salmon, squid, northern spot shrimp, lean tuna, red shrimp, red snow crab, eel and monkfish liver. It also includes half udon, tempura, salad and truffle chawanmushi (Japanese steamed egg custard), so the meal is packed.

How did the Premium Sushi Set taste?
The Premium Sushi Set came out as a neat full tray, and the fish on the sushi was thick and fresh. The staff were friendly in explaining things and serving the food.

You brush soy sauce onto the sushi with the brush provided, so it's a clean way to eat. The flatfish and sea bream were chewy, and the salmon was rich and nutty.

Warm, tasty mini udon

Crispy, juicy shrimp tempura and karaage (Japanese fried chicken)
A fresh salad that isn't sour
And truffle chawanmushi too

The lean tuna was mild, while the northern spot shrimp and red shrimp were fresh and sweet. The eel sushi went well with its sauce, and the monkfish liver gunkan (seaweed-wrapped sushi) was rich and creamy. Overall, the ratio of rice to fish was just right.
Lots of fresh sushi!
It's been a while since I had sushi!

Sides: half udon, tempura, salad and truffle chawanmushi
The half udon in the Premium Sushi Set had a warm, savory broth that suited eating alongside the sushi. The noodles were fairly chewy, topped with fried tofu and garland chrysanthemum. The tempura comes as shrimp tempura and chicken karaage together.

I was dying for a beer and had a hard time holding back. If it had been the weekend, I'd have been drinking beer from midday.

The tempura batter was crispy and the filling was full, and the white sauce drizzled over the karaage boosted the flavor. The salad vegetables were fresh and crunchy, and the dressing paired well with the refreshing cherry tomatoes. The truffle chawanmushi is a Japanese steamed egg custard with a soft texture and a subtle truffle aroma. The pickled ginger and rakkyo (pickled scallions) served on the side were also kept tidy and were good for cleansing the palate.

Clean, delicious sushi. I really enjoyed it after so long.
