Gunsan gamjatang with a split pot and table timers: Insaeng Gamjatang
In short

The half-and-half gamjatang arrives in a hotpot-style divided pot with ugeoji (napa cabbage leaves) on one side and mukeunji (aged kimchi) on the other, and staff cut the greens and kimchi into bite-size pieces and set a timer on each table so the wait is easy to track. I went to Insaeng Gamjatang Gunsan Branch for some hot gamjatang (pork bone stew) in Gunsan. They had a half-and-half option that lets you eat ugeoji (napa cabbage greens) and mukeunji (aged kimchi) versions at once, so I gave it a try. Getting both flavors in one sitting was so satisfying — let me introduce this Gunsan gamjatang spot!

The menu and ordering the half-and-half gamjatang

I've attached the menu info, so check it out before you visit! The lineup is built around gamjatang, and we ordered the half-and-half so we could try both flavors.
Inside the restaurant: private rooms and the self-serve bar

Insaeng Gamjatang Gunsan Branch has a clean exterior, so it was easy to spot even just walking by.

Inside, there were plenty of tables and an overall comfortable atmosphere for dining. There was also a room-like separated space in the back, which looked good for a group visit.

If side dishes ran low, you could easily grab more from the self-serve bar, and free parking made it convenient to visit by car! There were also restrooms in the building, which was handy.
How is the half-and-half gamjatang served?

The half-and-half gamjatang finally arrived! Like a hot pot with a divider down the middle, it came in a pot split into ugeoji gamjatang on one side and mukeunji gamjatang on the other. Being able to enjoy two flavors at once was so much better than I expected.

A staff member kindly cut up the mukeunji and ugeoji to make them easy to eat!

It was also nice that every table had a timer, so we didn't have to ask when it was ready. We closed the lid, waited until the timer rang, then opened it up and started eating.
What does the ugeoji (napa cabbage) gamjatang taste like?

First, the ugeoji gamjatang tastes like the familiar, classic gamjatang we all know, but the seasoning was genuinely delicious. The rich, spicy broth paired really well with the meat, and the meat was cooked until it fell off the bone smoothly. There was plenty of meat too, and soaking it in the broth made me instantly crave a bowl of rice! If you like a solid, classic gamjatang, I recommend the ugeoji.
What does the mukeunji (aged kimchi) gamjatang taste like?

And the one I personally loved — mukeunji gamjatang! This was my first time trying mukeunji gamjatang, and it was perfect for my palate since I usually love mukeunji kimchi stew. The tangy, deep flavor of well-fermented aged kimchi soaked into the broth, giving it a distinct charm that regular gamjatang doesn't have. Tearing off the mukeunji to eat with the meat was great, and mixing the broth into rice was an absolute rice thief...! If you love aged-kimchi dishes, I really recommend this one.
Is this Gunsan gamjatang restaurant worth a visit?

Being able to taste both ugeoji and mukeunji gamjatang at once made Insaeng Gamjatang Gunsan Branch even more satisfying! The meat fell off the bone easily and the broth's seasoning was rich, so I finished every bit of rice too. In particular, this was my first time trying mukeunji gamjatang, and since I love aged kimchi, it hit exactly my taste. It's a menu that works well for a hearty meal, hangover recovery, or just a comforting bowl of rice — if you're looking for a great gamjatang spot in Gunsan, go check it out!
