It's been so hot lately that I wanted to hide somewhere cool, so I dropped by 5to7, a dessert café in Seongsu-dong.

Most desserts elsewhere are pre-made or stored ahead of time, so it's hard to feel their true temperature or aroma. Because 5to7's Seongsu soufflé is made right when you order, you get to taste it warm and fluffy.

I got to watch the cream cheese matcha I ordered being made.


You could also see the soufflé being made — the pearl soufflé needs a torch for that caramelized flavor, and I watched the pearl soufflé I ordered come together.

Grab a seat first: second-floor seating at 5to7
I claimed a seat before ordering, choosing the 2nd floor. If you don't grab a seat ahead of time, you might end up with nowhere to sit — the wait was long.

There are many spots here with an artistic sensibility, walls left bare on purpose as a design choice.

The pearl crème brûlée soufflé, the cream cheese matcha, and the einspänner — it's truly gorgeous. It fully captures the charm of a soufflé and is a signature menu item at Seongsu 5to7. Sweet with the added texture of pearls, it's a fun item.

I could fully taste the crème brûlée flavor I usually enjoy.

It was amazing how the soufflé captured the full crème brûlée flavor without losing a bit of it — impressive technique.

The cream cheese matcha got tastier the more I drank it, too.


If orders had been backed up I would have waited longer, but luckily my order went in right away and I didn't wait too long.

What does the pearl crème brûlée soufflé taste like?
The fluffy soufflé pairs well with the pearls and the sugar coating. I don't think I'll forget the striking visual of the pearl crème brûlée soufflé.

It's sweet and delicious, great for a sugar boost and a mood lift. Soft cream sits on top of the soufflé with a sugar coating over it, torched directly so the coating hardens, and you crack it open bit by bit as you eat. Crème brûlée is a dessert meant to be experienced by the sound of cracking sugar, which makes it even more stylish.
The 5to7 Einspänner comes crème brûlée style too
The 5to7 Superner also finishes with a crème brûlée layer you have to crack, so I tapped and cracked it open too — another moment of sweetness. It's a coffee drink where smooth coffee, milk, and chewy custard cream come together in harmony, topped with crème brûlée that you tap-tap-tap and then crack open gently before drinking. I never knew I could enjoy crème brûlée so freely like this. I fully savored the harmony of sweetness and smoothness.

Is 5to7 worth a stop on a Seoul Forest visit?
5to7 is the soufflé spot you must visit when you go to Seoul Forest, so today felt like a real jackpot. Other menu items are good too, but the crème brûlée soufflé is truly special.

It's a Seongsu café soufflé spot, and enjoying it with the pearls was really fun. It works fine as a light dessert or a filling meal, with a fluffy texture and a mouthful of premium ingredients — a place I'd recommend.
