I had plans near Suwon Station and, craving good yukhoe (Korean beef tartare) with a drink for the first time in a while, went looking and ended up at Yukhoe Dokjon Suwon Station Branch. Suwon Station has so many restaurants and bars that it was hard to decide where to go, but this time I skipped hopping between dishes and decided to focus properly on hanwoo (Korean beef) yukhoe instead.

What is the atmosphere like inside Yukhoe Dokjon?
Yukhoe Dokjon Suwon Station Branch isn't huge, but it has a cozy atmosphere. The soft lighting made it a nice spot for a quiet chat over drinks.



Once inside, it felt cozier than I expected. It's not a huge restaurant, but there were plenty of tables, and the seats weren't packed too tightly together, so I could sit and eat comfortably. The lighting was also fairly soft, making it feel more like a place for a calmer conversation over drinks than a loud, rowdy bar.
What stood out most about Yukhoe Dokjon was their confidence in their hanwoo yukhoe. They said they use 100% chilled hanwoo yukhoe, never frozen — beef trimmed that same day, kept fresh at low temperatures, and mixed to order only once you place it — which got me even more excited.

On this visit at Yukhoe Dokjon Suwon Station Branch, we ordered live octopus hanwoo yukhoe, hanwoo yukhoe bibimbap, seaweed and a Terra beer. Beef radish soup also came out as a complimentary side.

The refreshing taste of the radish combined with the savory flavor of the beef, and it paired well with the yukhoe too.

The live octopus hanwoo yukhoe finally arrived. From the first look, the sheen on the yukhoe was quite appetizing. Best of all, the beef was cut thicker than I expected, which I really liked. At first I tried the yukhoe on its own without breaking the yolk. After tasting the clean, savory flavor of the meat itself, I broke the yolk and mixed it evenly through the yukhoe. As the yolk blended smoothly between the pieces of beef, the savoriness deepened even further. With the distinctive nutty aroma of sesame oil added on top, the flavor felt quite rich in the mouth.
Adding live octopus and seaweed for a mix of textures



Adding the live octopus completely changes the texture. After chewing on the soft, thick-cut yukhoe, the chewy bite of the live octopus adds a whole different kind of fun within a single plate. The yukhoe is soft while the live octopus is springy and chewy, and eating them together turned out to be a surprisingly good combination. That's probably exactly why it makes such a good drinking snack. I also added seaweed. Placing yukhoe on a sheet of seaweed and eating it together with the yolk added the salty aroma of the seaweed, giving it yet another flavor to enjoy.
Is the hanwoo yukhoe bibimbap filling enough as a meal?






After eating a good amount of the yukhoe, I also tried the hanwoo yukhoe bibimbap. The portion was more generous than I expected, enough to order as a full meal on its own. As the sauce mixed evenly through the rice and yukhoe, a sweet, savory umami flavor came through, and the soft texture of the yukhoe blended well with the rice, making it a filling dish. If you're visiting without drinking, I think ordering just the hanwoo yukhoe bibimbap as a meal would work perfectly well too.

Overall, using chilled rather than frozen hanwoo yukhoe made a clear difference in the texture and flavor, and the combination of thick-cut yukhoe with chewy live octopus stuck with me. The place isn't huge, but that cozy atmosphere made it a good spot to quietly chat over drinks with a friend or partner, and being tucked inside Suwon Station's restaurant alley, it also seemed like a good option for a second stop of the night.
Breaking the yolk over the thick-cut hanwoo yukhoe for a savory mix, pausing between bites with the warm beef radish soup, and then enjoying the chewy texture of the live octopus meant there wasn't a dull moment through the whole plate.
