Jonggak beef noodle shop: crystal dumplings in broth, Cheonghwa
In short

The writer ordered the uyuk dosakmyeon (knife-cut beef noodles in a broth said to simmer for 7 hours) and sujeongdal mandu (crystal dumplings filled with chive, meat and shrimp), and dipping the dumplings in the beef noodle broth to eat them like dumpling soup was the highlight. Atmosphere and menu at Cheonghwa Uyuk Dosakmyeon
The inside was reasonably spacious, more than I expected, and the whole place felt pleasant. It was quite busy too. Lots of people seem to come here for beef noodles near Jonggak Station.

The menu covers noodles, dim sum, meals and stir-fried dishes, plus extras, alcohol and drinks. I assumed a beef noodle specialist would mostly have noodles, but there were more choices than I expected.

I ordered two things this day: uyuk dosakmyeon (knife-cut beef noodles) and sujeongdal mandu (crystal dumplings). The noodles seemed like the signature dish here, so I picked them first, and I wanted to try the dim sum too, so I added the dumplings :->

The menu description says the broth is simmered for a whole 7 hours. 7 hours..? I was curious what a broth boiled that long would taste like, so I was excited before the food even arrived haha.
What free side dishes does Cheonghwa Uyuk Dosakmyeon serve?

When you order, you get cabbage and cucumber salad, peanuts, and soy sauce for dipping dim sum as the free side dishes. A staff member brought them over after I ordered!
The cabbage and cucumber salad was sweet and tangy, good with the beef noodles and likely to go well with other Chinese dishes too! I was picking at the peanuts one by one when the noodles and dim sum I'd been waiting for arrived.
Uyuk dosakmyeon: chunky noodles and 7-hour broth
The knife-cut noodles here aren't thin and even like ordinary noodles. They're chopped chunky and rough. First up, the uyuk dosakmyeon!

They aren't thin and even like regular noodles; they're cut in a rustic, chunky way.

Every noodle has a slightly different shape, so even the look is clearly different from ordinary beef noodles.

The bowl also had plenty of beef, so it was easy to scoop up noodles and meat together.

How to enjoy the knife-cut noodles
The best way is to put the noodles on a spoon and scoop them up together with the broth. It tastes much better than eating the noodles alone, since the broth comes along with them. The 7-hour broth seemed to suit the noodles even more this way!
Sujeongdal mandu: clear wrappers with chive, pork and shrimp
As the name suggests, the wrappers of the sujeongdal mandu (crystal dumplings) are transparent, so you can see the filling right through them. And this is the one I ordered alongside!

True to the name, the wrappers are see-through and the filling shows through.

Inside were loads of chives, pork and shrimp, and I liked how generously they were stuffed.

What if you dunk the dumplings in the beef noodle broth?
Dunking the dumplings in the knife-cut noodle broth and spooning them up like dumpling soup is really good. At first I dipped them in the dim sum soy sauce, but as I ate I thought they'd probably be good with the broth too.

So I put the dumplings in the broth and ate them like dumpling soup, and wow, this combo is delicious haha. The noodles are best with noodles and broth together, and the dumplings were great soaked in the broth too.

So, how was Cheonghwa Uyuk Dosakmyeon for beef noodles near Jonggak Station?
Cheonghwa Uyuk Dosakmyeon is a solid place to visit when you want beef noodles near Jonggak Station. If you order the knife-cut noodles and crystal dumplings together like I did, try putting the dumplings in the broth too. There's apparently a wait at normal times..! I enjoyed it, so I recommend it as a beef noodle spot near Jonggak Station ;-)
