Hoengseong butcher shop: hanwoo yuksashimi 248g to go for ₩22,320
In short
Hoengseong Hanu Jeongyukjeom is a hanwoo (Korean beef) butcher shop at 10 Munhwacheyuk-ro in Hoengseong-eup, Gangwon. On the drive back to Seoul after a day at Welli Hilli Water Planet, I picked up 248g of hanwoo yuksashimi (thick-sliced raw beef) for 22,320 won, and the shop packed the sauce and sesame oil dip with it so it was ready to eat straight from the box at home. The chewy texture and the savory flavor that builds with each bite made Hoengseong Hanu Jeongyukjeom's yuksashimi a fine match for whisky as well.

After a fun day splashing around at Welli Hilli Water Planet, I stopped by Hoengseong Hanu Jeongyukjeom on the way back to Seoul 😊 Since I'd come all the way to Hoengseong, I couldn't just pass up good hanwoo (Korean beef). Sure, I already had beef at home, but I can't resist fresh hanwoo yuksashimi (raw beef slices)! Haha. I visited in a good mood, already planning to have yuksashimi with a drink once I got home.

Where Hoengseong Hanu Jeongyukjeom is and what it looks like

Outside the shop was a big sign reading 'Hoengseong Hanu Jeongyukjeom,' easy to spot. It had that clean, friendly butcher-shop vibe that made it easy to walk right in. It was a convenient stop on the way from Welli Hilli Park back to Seoul to pick up some hanwoo. If you're looking for beef to take home after a trip to Hoengseong, this place is worth a visit.
What does the display case inside look like?
Walking in, the refrigerated case had a variety of cuts neatly arranged.

Each cut was labeled with the part, grade, weight, and price, making it easy to compare and choose. I liked being able to visually compare the color and marbling of the meat.

Besides the refrigerated case, the freezer also had a range of products like sagol (beef bone for broth) and wujok (beef feet).

There was also a yellow table and chairs off to one side where you could sit and wait a moment, and overall the place was kept very clean.
Which cuts of beef you can choose at Hoengseong Hanu Jeongyukjeom
Hoengseong Hanu Jeongyukjeom had a really wide range, from grilling beef to yukhoe (beef tartare) and yuksashimi. There were plenty of hanwoo cuts packaged up — sirloin, tenderloin, chaekkeutsal (strip loin), bucheotsal (shoulder blade), galbisal (short rib meat) — with lots of nicely marbled hanwoo on display. Beyond hanwoo, there was also pork like samgyeopsal (pork belly) and mokdaeji (pork neck), plus gopchang (beef intestines).

Hanwoo sagol was 15,000 won and hanwoo wujok was 20,000 won, with a sign saying mixed bones came free with either. The freezer had plenty of sagol and wujok on hand for making gomtang (bone broth soup) too. If you want to enjoy Hoengseong's famous hanwoo comfortably at home, it's worth picking cuts to match your budget and taste here.
The 248g of hanwoo yuksashimi I bought for 22,320 won

I already had beef at home but couldn't resist yuksashimi! Haha. In the end, what I picked was hanwoo yuksashimi 🥩 It was 248g for 22,320 won. It was already trimmed into easy bite-size pieces, so once I got home all I had to do was open the pack and dig in.

They even packed the yuksashimi sauce and sesame oil dip along with it, so there was barely anything extra I needed to prepare. The color of the meat was vivid and glossy, so it looked fresh just from the sight of it. The pieces were also cut into nice bite-size portions, easy to pick up one at a time with chopsticks.
How the hanwoo yuksashimi tasted back home
I got back to Seoul around 8:50pm, put everything away, and around 9:30pm settled in for a relaxed round of yuksashimi and drinks 😄

I was tired from the water park, but seeing the delicious yuksashimi melted all the fatigue away. The yuksashimi was fresh, and its chewy texture really came through. It wasn't tough at all, had a great chew, and the savory richness that built with each bite was fantastic. It was tasty plain, but dipping it lightly in the sesame oil sauce brought out even more of that nuttiness.

Adding the yuksashimi sauce they gave me brought a salty, tangy kick that gave it a whole different charm. Rather than piling on too much sauce, adding just a little at a time so I could still taste the beef itself suited my palate better. It also went surprisingly well with chilled whisky 🥃

Thanks to the chewy, savory hanwoo yuksashimi, I got to have a proper drink at home too.
