Chamdwaejitgan Magok doesn't have that cramped, tables-crammed-together feel that a lot of BBQ places do — even the basic 4-person tables are spacious enough to spread out the meat and side dishes comfortably. You don't really notice this when it's just two of you eating, but it matters a lot when a bigger group goes for BBQ. I hate it when there's no room for a single extra plate and you keep shuffling glasses around and stacking side dishes on top of each other... haha. Chamdwaejitgan has way less of that frustration, so among BBQ spots near Balsan Station, it really works well for gatherings with several people.

When the meat came out, the thickness was the first thing that caught my eye. It wasn't thinly sliced meat — each piece was a proper thick chunk, so I was already excited before it even hit the grill. My favorite combo at Chamdwaejitgan was the minari (water dropwort) and bean sprout kimchi they grill alongside the meat! As the meat's fat drips down a little, the kimchi and bean sprouts cook together with it, and it goes so well with samgyeopsal. If you put a piece of meat with grilled kimchi, bean sprouts, and minari all on top, it cuts the richness while the kimchi's tang comes through, and it feels like eating the first bite all over again — I just kept going, haha. Minari in particular gives off a subtle aroma once cooked, and it pairs really well with pork.

Pork neck: thick cut but never dry
Looking at how thick the pork neck was, I thought, 'if this is grilled wrong, won't it end up dry?' But maybe because the staff grilled it just right, the inside was moist and tender. It has less fat than pork belly, but when you chew it, the meat's own flavor comes through more, so I honestly loved the pork neck too. A bite of rich pork belly, then a bite of lean pork neck — you know how that just keeps you going, haha.

The chamsamgyeopsal (real pork belly) has a nice mix of lean meat and fat layers, so it looks delicious the moment it's grilled. The staff cut it into bite-sized pieces and grill the surface until properly golden — when you bite in, the fat's savory flavor hits first, then the juiciness of the lean meat follows. Pork belly that's mostly fat gets tiresome after a few bites, but here the lean-to-fat ratio is good enough that I kept reaching for more.

Potato ssam: a first-time combination that works
One thing that was a bit unusual here was the potato ssam! They slice potato thin, grill it on the pan, then top it with meat, kimchi, bean sprouts, and so on to wrap and eat. At first I thought, 'wrapping meat in potato?' but once I tried it, it worked surprisingly well. The thinly grilled potato is slightly chewy and savory on the surface, and with the meat's juices and kimchi flavor coming in together, it's a totally different feel from the usual lettuce-wrap style ssam. If you go, you have to try this at least once. It's a Balsan Station BBQ spot that's fun to eat at too, haha.

Eating here again, it was even clearer why Chamdwaejitgan works so well as a Balsan work-dinner spot. The restaurant is spacious so it's comfortable for a bigger group to sit together, the staff grill everything for you, and there are cut options like black pork and Boseong Nokdon pork so everyone in the group can pick what they like. Plus, with combos like minari, bean sprout kimchi, and potato ssam to eat alongside the meat, it never feels like you're just eating the same samgyeopsal over and over.
