Cheongju sotbap restaurant, short rib and salmon gimbap: Sorori Sotbap

A tidy, satisfying meal recommendation: Sorori Sotbap Culture Factory Branch

This weekend I was planning an exhibition date at the Cheongju Culture Factory, so I stopped by Sorori Sotbap's Culture Factory branch beforehand to fill up on a good meal. I'd wanted to try Sorori Sotbap for a while, and it just so happened I had a reason to visit the Culture Factory, so I went to this branch. Here's my honest review of the short rib pot rice and salmon buckwheat gimbap I loved so much :)
Where Sorori Sotbap Culture Factory Branch is, plus hours and parking
Sorori Sotbap Culture Factory Branch is on the first floor of the Culture Factory at 314 Sangdang-ro, Cheongwon-gu, Cheongju-si, Chungcheongbuk-do. It's open daily from 11:00 to 20:30, with a weekday break time from 15:00 to 17:00 and last order at 20:00.

The store's intro mentioned that it opened in January 2020 and has sold over 50,000 bowls of its signature Sorori rib pot rice, that the buckwheat gimbap and salmon buckwheat gimbap are cured with a special tsuyu sauce first introduced in Sorori, Cheongju, that fresh pot rice broth and braised short rib are made every dawn, that only fresh sesame oil sourced directly from a local oil mill is used, and that only rice from the Chungbuk region is used.
For parking, you can use the Culture Factory parking lot. There were a lot of cars since it was the weekend, but the lot was big enough that parking wasn't too hard.


How long is the weekend lunch wait at Sorori Sotbap?
Once you walk in through the first-floor entrance of the Culture Factory, Sorori Sotbap is easy to find. We arrived a bit past lunch hour, but there were still quite a few people on the waiting list.



At the waiting entrance there was also a menu board with cute illustrations of the dishes, which was nice — you could look at the photos and think over what to order, so the wait didn't feel boring at all. We ended up getting seated pretty quickly.
Inside Sorori Sotbap: seating and atmosphere
The inside had more tables than I expected — about 12 to 15 four-person tables. There were baby chairs too, so there were families with kids as well as friends and couples, all kinds of customers.

What I personally liked was the open kitchen layout. Since the kitchen is visible straight from the dining hall, you can watch the food being prepared, and more importantly, you can see for yourself that the kitchen is being kept clean — which made me feel a bit more at ease eating there.

Around the store there were cute little props and posters here and there. Overall it felt cute and comfortable rather than flashy, and having little things to look at while keeping things clean and tidy made it a pleasant place to eat.

Once seated, each table has a tablet, and you order using the tablet system.


We ordered the short rib pot rice for 16,000 won, the fresh salmon buckwheat gimbap for 13,000 won, and a drink for 2,000 won. Since the short rib pot rice was introduced as the store's best menu item, I'd been wanting to try it for a while and had high expectations. And since I really love salmon, I also ordered the fresh salmon buckwheat gimbap.
How to eat the pot rice and buckwheat gimbap

I liked that they had detailed instructions on how to eat everything.
- How to enjoy Sorori pot rice: Mix the rice thoroughly, all the way to the bottom of the pot. Add butter, soy sauce, or furikake and wrap it in seaweed.
- How to enjoy the buckwheat gimbap: Have the buckwheat gimbap with pickled ginger. Dip the salmon buckwheat gimbap in wasabi soy sauce.

Side dishes and the self-serve bar
I liked that they gave out bottled water for hygiene reasons.

Soy sauce and furikake are set on the table as basics.
The basic side dishes were diced radish kimchi, pickled hot pepper, seasoned squid, seaweed, and butter — overall a lineup of dishes that all pair well with rice.

If you need more side dishes, there's a self-serve bar. If you run low while eating, you don't have to call a staff member — you can just grab as much as you need from the bar yourself, which was convenient. The self-serve bar also had warm soup, not just side dishes. I'm not sure of the exact name, but it felt like a warm soy-based broth.
Short rib pot rice, 16,000 won: why it is the best seller
And finally, the main dish we'd been waiting for arrived. It looked so appetizing I couldn't wait to dig in.

First, the short rib pot rice. There was clearly a reason it's introduced as the store's best-seller. The short rib was truly, truly tender. The rib meat pulled apart easily with chopsticks and was moist and soft to eat.

The sauce on the ribs wasn't too strongly seasoned either, which I liked. If the seasoning is too intense it can drown out other ingredients, but here it just added a moderate savory depth, so I kept eating without feeling overwhelmed. The combo of laying short rib, rice, wasabi, furikake, and butter on a piece of seaweed and dipping it lightly in soy sauce was the best. Tender, savory rib with the sharp kick of wasabi, plus the nuttiness of furikake and the richness of butter — genuinely delicious.


My partner tried it too and said it was really good, eating quite a lot of it. And it's not just rib and rice — there's also chestnut, sweet pumpkin, and jujube mixed in. It's almost like a nutritious pot rice with all sorts of ingredients, so the rice itself wasn't plain at all. The portion of rib was also generous enough that we could keep eating meat with the rice all the way to the end.
How does the fresh salmon buckwheat gimbap taste?
Next up was the fresh salmon buckwheat gimbap. I really love salmon so I had high expectations when ordering, and sure enough, having real fresh salmon in it made it delicious. The egg mixed in was soft and subtly sweet, pairing well with the salmon.

There was also fried tofu skin (yubu) in the middle, adding a good bit of savory depth and seasoning. Overall it felt seasoned with tsuyu throughout, so even without adding extra seasoning, each bite was just right. Personally, I liked dipping it in wasabi soy sauce best — the nutty, soft flavor of the salmon meeting the sharpness of wasabi made it taste clean and refreshing.

My partner tried an unusual combo — topping it with seasoned squid, butter, and wasabi. An odd combination, but he said it was pretty good haha.

A date course with a Cheongju Culture Factory exhibition
Being able to have lunch and an exhibition date at the Culture Factory all in one outing made the whole day feel really full. Since it's right on the first floor of the Culture Factory, I'd recommend Sorori Sotbap as a great place for lunch either before or after viewing the exhibition.
The short rib pot rice I had was wonderful thanks to the tender rib, and as someone who loves fresh salmon, the fresh salmon buckwheat gimbap was also a highly satisfying dish. Whether with a partner or family, I'd recommend Sorori Sotbap as a Cheongju date spot where you can enjoy an exhibition and a great meal together.
