Today I was hunting for a good dessert near Gongdeok Station and ended up at Fluffy Bake Shop (플러피 베이크샵), a place famous for baked sweets. It's an easy walk from the station, and it sells financiers, madeleines, canelés and more, so even on weekdays lots of people stop by. It's known for rich flavor thanks to AOP-grade Rescure butter, and with plenty of gift packaging on offer, it's popular for thank-you presents and snacks too.

The exterior is clean, with cream-toned walls and a cute madeleine-shaped signature logo that catches your eye. I spotted it easily from far away.


I thought it was takeout only, but once I stepped inside there were calm, quiet seats too. It felt like a relaxed spot near Gongdeok to enjoy a dessert with coffee.

Friday at 5pm: what was left of the baked sweets
Fluffy Bake Shop apparently offers 16 kinds of madeleines, 9 kinds of financiers and 3 kinds of canelés.


Maybe because I came around 5pm on a Friday, many of the popular items were already sold out. Still, quite a few kinds were left, so I agonized a bit and picked several.

Packaging options and individually wrapped paper bag
There were various packaging options, like a 4-piece pulp lunchbox and 6- and 15-piece shopping-bag boxes.

I was eating at home, so I went with the basic paper bag. I also had some for my partner, and they packed 2 separately, which was a thoughtful touch. While I waited, delivery orders kept coming in. It seems to be a really popular Gongdeok bakery in the neighborhood.

There was a coffee and drinks menu at the counter, and takeout coffee gets ₩1,000 off.

How to store madeleines, financiers and canelés
One side had detailed storage instructions. Madeleines and financiers keep 2-3 days in a cool place, or about 2 weeks sealed and frozen. Madeleines should be thawed for 30 minutes to 1 hour; financiers can be warmed in an air fryer or oven at 160°C for 3-5 minutes. They also recommend eating them frozen ("eolmeok", a frozen-treat habit). Canelés also keep about 2 weeks frozen, and taste even better thawed for 30 minutes to 1 hour or heated in a 160°C oven or air fryer for 10-15 minutes. Everything is said to be best on the day of purchase, but I was too full that day, so I ate them the next day, and they were still plenty good.
I figured everything would just be tossed together in the paper bag, but each baked treat was carefully wrapped individually. That meant no worry about them getting squashed on the way home, and it was easy to take them out one by one. Now, let me share how each one tasted.

Chestnut madeleine and vanilla financier
First up was the chestnut madeleine, filled with Mont Blanc cream and topped with sweet candied chestnut (bonyeongbam). The outside had a faint, lightly coated crispness, and the inside was moist and soft, so I said "yum" right after the first bite. The chestnut sweetness wasn't overdone, so it was easy to enjoy.
Next was the vanilla financier. It's a basic financier made with browned French butter for a nutty flavor, plus vanilla bean for aroma. I ordered it on purpose, since the plainer the item, the better you can taste the butter. One bite and the butter aroma spread richly with a gentle vanilla note. Simple, but one of the satisfying ones.


Nutella madeleine
I also tried the Nutella madeleine, baked with hazelnuts and crystal sugar, generously filled with Nutella and topped with a marshmallow. As a chocolate lover, it was totally my taste. The Nutella gave a sweet yet deep chocolate flavor, and the marshmallow made the texture fun.


Espresso pecan madeleine
The espresso pecan madeleine is baked with caramelized pecans on top and filled with espresso ganache. A gentle coffee aroma spreads, and it felt a little like eating a mocha bun. With the crunch of nutty pecans, it was one of my personal favorites.


Walnut caramel financier
I tried the walnut caramel financier too. The batter is mixed with caramel made from French fresh cream and topped with caramelized walnuts. The caramel aroma is strong but it isn't very sweet, so it was easy to finish. The walnuts were crunchy and the texture was really good.

Corn madeleine
The corn madeleine has corn kernels in it, and the pop of each bite was fun. The sweetness of the corn comes through well, so I'd recommend it to anyone looking for a different kind of madeleine.

Nunetine financier
I tried the Nunetine financier too. It captured the taste of the familiar Nunetine cookie well as a financier. With its sweet yet crunchy topping, I kept reaching for it like a snack.


Overall verdict after trying all 7
Overall, the financiers were really appealing, slightly crisp outside and chewy inside. The various toppings made each one different in texture and flavor, so choosing was fun. The madeleines were moist and soft without any dryness. Maybe thanks to the AOP-grade Rescure butter, the butter flavor was definitely rich, and each item had a distinct personality, so you'd be happy with any pick.

If you're looking for good baked sweets near Gongdeok Station, I'd recommend dropping by at least once. It's great for thank-you gifts and presents, and also nice for a relaxed dessert with coffee, so it was a satisfying visit.
