Where in Hongdae can you get a soufflé pancake topped with a whole peach?
The place for a soufflé pancake topped with a whole peach is Think Fruit (띵크프룻), a soufflé pancake dessert café in Hongdae. Have you ever had a dessert with a whole peach on it? This was my first time seeing one, and my eyes went wide, haha.
I was searching for somewhere to have dessert in Hongdae and looked up all sorts of soufflé pancake cafés. That's how I found Think Fruit. Once I heard they had a peach menu item, I ran straight over, and I was totally satisfied, haha.
What does the outside of Think Fruit look like?
The exterior is exactly what you'd call modern but cute. It caught my eye the moment I arrived, with clean lines and little playful touches, so I thought it would be great for photos.
There are so many cafés in Hongdae, right? But this kind of vibe makes you stop in your tracks even when you're just passing by, haha.

There's a standing sign by the entrance with a cute drawing of a fig pancake. Just from that drawing I thought, this place takes fruit desserts seriously, and my expectations went up. A small detail like this seems to decide a café's first impression, haha.

Is the seating inside Think Fruit roomy and comfortable?
Inside, big floor-to-ceiling windows let in natural light, so the space looked bright and wide. It was really clean overall.

The seats are spaced generously, so it didn't feel cramped, and it's a nice atmosphere for enjoying dessert slowly.

A soufflé pancake takes time to make, so a space where you can sit back and relax matters, right? In that sense it was perfect, haha.
Strawberries and figs ripening at the counter
By the counter at Think Fruit, strawberries and figs were sitting there ripening. Seeing that with your own eyes makes you trust that they handle their fruit with care.

At a dessert café, the condition of the fruit decides more than half the taste. Seeing this made me even more excited for the peach pancake, haha.
What drinks go with a soufflé pancake? Iced Americano and salt cream coffee

Iced Americano
It's the basic of basics, an iced Americano. When you're eating something sweet, a clean Americano is a must. It tidied up my mouth, so it was easy to alternate with the pancake :)

Salt cream coffee
The point of Think Fruit's salt cream coffee is the cream on top. Its nutty, salty flavor meets the bitterness of the coffee and becomes a sweet-and-salty combo. It goes even better with a sweet dessert, so I definitely recommend this pairing, haha.
What happens when you cut Think Fruit's peach soufflé pancake in half?

Think Fruit's peach soufflé pancake comes with a whole round peach sitting on top of the pancake. Okay, here's today's star. The moment the plate arrived I blurted out, "Huh, what is this?" without even meaning to, haha.
The peach just sitting there, round and whole on top of the pancake, was so cute. I wondered for a moment how to eat it, then decided to cut it in half first.
When I put the knife through the middle, cream came pouring out from inside! It was a cute setup, a peach-shaped dessert with soft cream tucked inside. It was a look I'd never seen, so I laughed for ages while taking photos, haha. It was almost too pretty to eat, but it tasted really good too.

Soufflé pancake texture and taste
On the first bite, the soufflé pancake just melted away the moment it hit my mouth. The outside is slightly chewy, but the inside is fluffy like a cloud, so it dissolved without any chewing.

The soufflé pancake was fluffy, the cream was smooth, and the peach scent spread softly, for a pleasant kind of sweetness.

The look is really unique and cute, so it's great for photos. The peach soufflé pancake was delicious, and the roomy, clean interior made it comfortable. The eggy flavor comes up nutty and the sweetness isn't overdone, so I didn't get tired of it. Eating a spoonful of the soft cream with it spreads a rich milky flavor and completes a luxurious sweetness, haha.

The peach is juicy and moist, with a gentle fragrance that lingers at the end, and it went really well with the nutty pancake. Sweet, fluffy and fragrant all at once, so my fork kept going back, haha.
Would I go back to Think Fruit?
I'd like to revisit Think Fruit when the season changes and try other fruit menu items. I keep thinking about the fig pancake on the standing sign, haha.

If you're looking for a soufflé pancake dessert café in Hongdae, definitely go to Think Fruit. The fun of cutting that peach pancake in half is something you have to experience yourself.
