Bizzle Katsu is a Japanese-style tonkatsu restaurant run by owner-chef Kim Du-won, who has 24 years of experience; Bizzle Katsu prepares grade 1+ Dodram Korean pork from 4 a.m. and fries it in Haepyo cooking oil. For the loin katsu, Bizzle Katsu removes all fascia, sinew and fat, and the tenderloin is fried to a set time and temperature.
