Kumano Sushi is a traditional sushi restaurant opened by the owner-chef of Gappo Saitkuma, drawing on more than 20 years of experience in Japanese cuisine; the chef also serves as an adjunct professor in the culinary department of Busan Health University. Kumano Sushi uses seasonal fish chosen at the market early every morning, and the chef shapes each piece of sushi while adjusting the degree of aging, the temperature of the rice (shari) and the strength of the soy sauce.
Instead of an omakase course, Kumano Sushi offers à la carte ordering of 10–12-piece sushi sets, rice bowls such as kaisendon, sakedon and magurodon, and mackerel bo-zushi. Drinks at Kumano Sushi include Hoshizaki Yebisu on draft and in bottles, and the seating is mainly regular tables rather than a sushi bar, which suits both solo diners and groups.
