About

Namhwajeong is a Korean restaurant in Songjeong that serves samgyetang and restorative seafood dishes made by brewing a beef short rib broth and a medicinal-herb chicken broth separately and then combining them. Of the two herbal decoction pots in Namhwajeong's kitchen, one slowly simmers a clear broth from beef short ribs alone, while the other simmers chicken, chicken feet and more than 10 kinds of natural medicinal herbs for over 6 hours; the two broths are combined at the end. Namhwajeong's signature Herbal Galbi Seafood Samgyetang combines chicken and beef short ribs with abalone, octopus and shrimp, while the Spicy Haehwajjim is made with only beef short ribs and seafood, without chicken.

Namhwajeong's other signature, the Oak-Fired Nurungji Roast Chicken, is cooked slowly over oak firewood only; the chicken is stuffed with glutinous rice, jujubes, ginseng, garlic, pine nuts and ginkgo nuts, and is served together with the nurungji (crispy scorched rice) that forms during roasting. Namhwajeong uses chicken delivered from the farm on the same day, serves a seasonal cold tea and a warm jujube and oriental raisin tree tea as welcome drinks before the meal, and makes and seasons its own kimchi and jeotgal (salted seafood) in house.
