I had dinner plans and was looking for a meat restaurant in Hapjeong when I visited Champpoppo Jjokgalbi Hapjeong Branch (참뽀뽀쪽갈비 합정점)—the name alone was just too cute!

It sits right in the middle of Hapjeong’s dining alley, making it the perfect first stop for delicious pork ribs and a drink before moving on to a second spot. It was easily among the tastiest pork ribs I’ve tried, so let me introduce it right away.

It was bustling on a weekend evening, but luckily I got in right away without waiting. Upbeat music filled the restaurant, so I could really enjoy that lively weekend-night mood.

There were unusual combinations such as a pasta set, too, so it looked easy for a group to order to everyone’s liking. I started with two servings of soy sauce pork ribs plus one serving of seasoned pork ribs. (💡 Please note that the minimum order is three servings!)

The spread of banchan (Korean side dishes) that arrived after ordering was seriously generous. White kimchi, radish, pickled onions, cabbage salad, corn cheese, and three dipping sauces were all served neatly.

What surprised me most was the complimentary warm chicken porridge, chewy pork skin, and potatoes! The rich, soft chicken porridge was perfect for soothing my stomach before digging into the ribs.

The maesil (Korean green-plum) highball I ordered was sweet, tangy, and refreshing. It did an excellent job of clearing and freshening my palate between bites of meat.

Before the ribs arrived, I ordered tuna rice balls in advance.

I shaped them into little bite-size rounds and set them out before the meat was cooked, which made them so handy to top with the ribs later. If you like spice, I recommend the Tear Gas Rice Balls, too.

How to grill par-cooked pork ribs perfectly

After a 15-minute wait, the pork ribs finally appeared—and just look at them. They arrive already par-cooked, so place them bone-side down for 2–3 minutes, then flip them for just 30 more seconds for the best flavor! They had been trimmed so the meat separated easily from the bones, making them perfect to pull apart comfortably with my hands.

The gentle smoky flavor and deep savoriness made them both clean-tasting and addictive. Their chewiness was still there, too, so the fun of pulling off the meat was unmistakable.

Despite their deep-colored sauce, the seasoned ribs were a wonderfully savory sweet-and-spicy bite—not excessively hot or sweet.

They were golden and chewy outside and tender within; alternating between the soy sauce and seasoned ribs meant I never had a chance to get tired of them.
