I finished an errand nearby and didn't want to just go home, so I stopped by the basement food hall of Hyundai Department Store KINTEX. I'd heard that Boulangerie Tan, a bakery with a great reputation, had opened a branch here and really wanted to try it, and I finally made it! Here's my honest takeout review, with the lovely smell of bread all around.

Location, parking and brunch time at Boulangerie Tan KINTEX

Boulangerie Tan is in the B1 food hall of Hyundai Department Store KINTEX. It's a decent walk from Exit 2 of GTX-A KINTEX Station, and you can use the department store parking lot if you drive. The first 30 minutes are free, so a quick takeout stop is no burden.

From 10:30 a.m. to 2 p.m. there's also a signature brunch set with a carrot slaw chicken salt bread and an americano at a good price, so aiming for brunch time is a handy tip.
There's also a deal: buy 3 salt breads and get 1 gourmet butter salt bread free, so is there any reason not to buy 3 salt breads!?

The shop itself is small and cute, but my jaw dropped at the packed bakery lineup on display. As a KINTEX station bakery in a department store basement, it had that lively energy typical of a food hall. With the heat these days, everyone seems to escape to the department store, so it was crowded.

It was too crowded for me to take photos, but there are eating tables right in front of the shop, perfect for a light meal or dessert break while shopping.

Boulangerie Tan's baking principles
What I trusted most was their production principle. They use Rescure Charentes-Poitou AOP butter, and follow a rule of same-day baking, same-day sale and same-day disposal. They insist on a self-cultured natural levain starter, organic wheat, French wheat, natural butter and animal-based fresh cream, so you can feel how serious they are about bread.
There's also a classy cornet pie gift set that looked great for gifting, and Boulangerie Tan looks fully capable of group orders too (events, seminars, snacks).
Boulangerie Tan menu and coffee lineup
The overall menu is a lineup that makes bread lovers' eyes flip. (And that bread lover with flipped eyes is me..)

The coffee lineup, with deep flavor from Fritz Old Dog beans, is ready too!

For bakery items, the choices were truly rich: the signature carrot slaw chicken sandwich and carrot slaw chicken salt bread, chocolate baguette, jambon fromage, ciabatta, campagne, a variety of salt breads and cornet pies.

Here's what I carefully picked out! Let's dig in -
The 6 breads and sandwiches I ordered
- Olive cheese ciabatta
- Carrot slaw chicken sandwich
- Pollock roe potato salt bread
- Mochi (glutinous rice cake) salt bread
- Garlic butter salt bread
- (Gourmet butter salt bread from the salt bread 3+1 deal)

Olive cheese ciabatta
The olive cheese ciabatta is the ultimate in plain, simple flavor. My husband loves this bread, so I picked it up, haha.

It's soft and chewy, studded with salty olives and savory cheese, and the flavor bursts out the more you chew.
Carrot slaw chicken sandwich
For the carrot slaw chicken sandwich you can choose a salt bread or a baguette, and I picked the salt bread!

I instantly understood why it's the signature. Crunchy, tangy pickled carrot slaw is packed with plain chicken, and the texture combo is crazy good.

One bite and freshness fills your mouth, so it's not greasy at all. Best.

Pollock roe potato salt bread
The pollock roe potato salt bread is a can't-go-wrong combo. Bread with pollock roe is a must!

Soft, mild potato topped with salty, umami-bursting pollock roe makes for a hearty, addictive flavor.

Mochi salt bread
The mochi salt bread has chewy glutinous rice cake tucked right inside a buttery salt bread, and the texture is genius.

You get the nuttiness of salt bread, the chew of rice cake and the sweetness of red bean all at once, a treat for both rice cake lovers and bread lovers.
Garlic butter salt bread
The moment you open the garlic butter salt bread, a sweet garlic aroma spreads softly.

The salt bread base is crisp outside and moist inside, soaked with savory butter flavor and an umami-packed garlic sauce. The sweet-salty garlic butter fills your whole mouth.

Gourmet butter salt bread from the 3+1 deal
The gourmet butter salt bread is the textbook salt bread.

The rich, savory aroma of butter lies underneath, and it's crisp outside, moist and chewy inside. The sweet-salty balance with the salt is art!
Is Boulangerie Tan KINTEX worth a stop?
It's an ideal spot to stop by before or after department store shopping for good bread and a coffee. Maybe because they only use high-quality ingredients, I didn't feel bloated at all after eating, and my stomach felt comfortable.
