What is Gukdam Sundaeguk Main Branch like?
Gukdam Sundaeguk Main Branch is a sundaeguk restaurant at 8 Namdong-daero 897beon-gil, Unit 101, 1st floor, Namdong-gu, Incheon. It's open 10:00–22:00 and closed every Sunday. I found a sundaeguk spot in Ganseok-dong with a clean broth and lots of lean meat! Not a hint of gamey smell, and the meat was tender without much fat, exactly my style!

The exterior of Gukdam Main Branch! It's close to Ganseok-ogeori Station~
It's a newly opened branch and the inside is super clean~ It was around lunchtime so it was bustling, with lots of neighborhood locals and plenty of people eating solo~
What's at the self-serve bar?
The self-serve bar has a variety of side dishes and sungnyung (scorched-rice tea).

Side dishes and sungnyung are all laid out!! For a gukbap (soup with rice) place, the side dish level is incredible~ And sungnyung is something every Korean loves!!
Broth simmered with care from dawn every day, boiled pork, house-made kkakdugi (cubed radish kimchi), barley ssamjang and dadaegi (seasoned chili paste): Gukdam puts care into every bowl, with a clean yet deeply mellow flavor.
What's on the menu and what did we order?
The menu is well rounded: sundaeguk, chalsundae, suyuk (boiled pork slices), Hanwoo gopchang hot pot (beef intestine hot pot) and grilled Hanwoo gopchang. That day we ordered two bowls of sundaeguk and a sampler half plate of suyuk.

Ordered the sundaeguk and the suyuk sampler (half plate)!

A very confident origin-of-ingredients board!!! haha
What are the basic side dishes like?
The basic sides are generous: kkakdugi, buchu-muchim (seasoned chives), gwi-muchim (seasoned pork ear), seasoned dried radish, crunchy green chili, barley doenjang (soybean paste), salted shrimp and dadaegi. The chive salad and pork ear salad were especially good.

A generous spread of basic sides~

Kkakdugi and chive salad. Oh, the chive salad is so good!
The pork ear salad I got a refill of

This is the pork ear salad! First time I've seen a place serve it~ I thought it was from the pig's head, and it's a bit like pork skin, but way cleaner, chewy and springy!!! And the seasoning... is crazy!!!!!!! I asked for a refill of this one!! haha The owner was so kind too, which put me in a great mood!

Seasoned dried radish, crunchy chili, barley doenjang, salted shrimp and dadaegi. The dried radish doesn't taste store-bought, it has real hand-made flavor~ The barley doenjang is a house-made sauce too, and you can tell every dish at Gukdam is made with care~

Even the water isn't plain bottled water but hovenia tea (heotgae-cha)! Nutty and cool, I gulped it down haha
How are the sundaeguk broth and meat?
Sundaeguk is ₩10,000 a bowl, and we ordered two. It arrives bubbling hot, topped with plenty of scallions, and the meat is mostly generous lean pieces.
The sundaeguk is here~ It came out bubbling with loads of scallions on top, and I love scallions~ haha

I added a heap of chives on top too~ Chives are so good these days~

Inspecting the filling~ haha The meat is totally generous! And since it's mostly the lean meat I love, even better! The broth is rich and clean too! No extra seasoning needed, the saltiness is just right!!!
4 pieces of chalsundae, dipped in ssamjang and salted shrimp

Each bowl comes with 4 pieces of chalsundae~ They're hot, so I took them out ahead of time to cool haha

I like dipping sundae in ssamjang (seasoned dipping paste). But topping it with a bit of salted shrimp is good too!
What is the half-plate suyuk like?
The sampler half plate of suyuk is ₩11,000, with chewy meat that tasted more like head meat than lean meat. It was glossy with fat but not greasy.

We ordered the half plate of suyuk too~

The suyuk tasted less like lean meat and more like head meat, with a lively chewiness! Glossy with fat, but not greasy~ haha Not mushy at all, but firm and springy!
How did we eat the sundaeguk?
I started with the soup plain, then added plenty of perilla powder~ I also put rice in.. and topped it with kkakdugi, and it was seriously filling!!!
Great as a clean, hearty meal and excellent as drinking food too. Please go try Gukdam in Ganseok-dong!!
