Gwanggyo Italian restaurant, 18-hour fermented dough: The European

In short

The European Gwanggyo is an Italian restaurant specialising in wood-fired pizza on the Gwanggyo café street in Suwon, Gyeonggi. The dough ferments for 18 hours and ages for another 24 before it is baked at 485°C in a Stefano Ferrara oak-fired oven, so the rim comes out crisp while the inside stays chewy, and the European-style interior spread over two floors kept the room interesting throughout the meal. The European Gwanggyo is worth remembering in Gwanggyo when you want the food and the setting to be equally good.

I went to The European Gwanggyo (더유로피언 광교본점) wanting a good meal in a nice atmosphere in Gwanggyo. I already like pizza, so hearing it specialized in wood-fired pizza got me excited, and once I actually visited, both the food and the interior stuck with me.

What kind of restaurant is The European Gwanggyo?

The European is apparently run by a chef with 10 years' experience at the Shilla Hotel in Seoul, specializing in wood-fired pizza. The moment I walked in I felt like I'd stepped into Europe — the interior is upscale but warm, easy to relax and eat in.

The space is split across two floors, so it's fairly roomy. It's nice for a small, unhurried meal, but it also looked good for group gatherings like family meals, banquets, or first-birthday parties. It felt less like a place to just eat and more like a restaurant where you enjoy the atmosphere along with the food.

18 hours of fermentation, 24 hours of aging and a 485°C oven

The dish I was most looking forward to was, of course, the wood-fired pizza. The European uses strictly inspected oak, ferments the dough for 18 hours, then ages it for 24 hours. And they bake it at 485°C in a premium Stefano Ferrara oven, which made it clear this place is serious about wood-fired pizza.

When the pizza arrived, that distinctive wood-fired look caught my eye right away — nicely charred at the edges, thin and chewy in the middle. It looked delicious before I'd even taken a bite.

How does the wood-fired pizza dough taste?

The dough texture was especially good on the first bite. It wasn't heavy or overly floury — clean and chewy, which worked really well with the toppings. The edges were slightly crisp while the inside stayed soft, so it was tasty all the way to the crust.

Wood-fired pizza really does have a different charm from pizza baked in a regular oven. Baking fast at such high heat seems to preserve the dough's flavor, and the subtle smoky aroma from the oven was great too. If you like pizza, you'll really feel the appeal of proper wood-fired pizza here.

What else is on the menu besides pizza?

There's a good variety of pizzas, so it was fun choosing. From classic pizzas to ones loaded with cheese and different toppings, there's plenty to pick based on taste. If you're going with a group, ordering pizza plus pasta to share is a good idea too.

Besides pizza, they also have pasta, lasagna, gnocchi, risotto, and steak, so it's a good option any day you're craving Italian food. With so many choices, it works well even if some people in your group want pizza and others want something else — everyone can order to their own taste.

The European-style interior across two floors

And honestly, I liked the atmosphere as much as the food. The European-style interior was pretty striking, so it was fun to look around the space throughout the meal. The lighting and overall vibe were warm, which made it great for food photos and would suit a special occasion too.

When you're hunting for good restaurants in Gwanggyo, sometimes the food is great but the atmosphere falls short, or the atmosphere is great but the food doesn't quite deliver. The European felt like a place where you can enjoy both at once.

Is The European Gwanggyo good for dates, family meals or group dinners?

It seems like a solid pick for a date spot, and it would also suit family dinners or hangouts with friends. With the space split across two floors, it's relatively comfortable even for a larger group, and the European atmosphere made the meal feel a bit more special than usual.

Final thoughts after visiting The European Gwanggyo

What I liked most about The European Gwanggyo is that it's not just a place to eat pizza — you get to enjoy good food and a good atmosphere together. In particular, the wood-fired pizza itself, made from carefully aged dough baked at high heat, was impressive in both flavor and texture.
