Today's story is about Sasang Paldo Jokbal (사상팔도족발), a well-known local favorite in Sasang. I debated getting half jokbal, half buljok (spicy fire-style trotters), but that day I was craving something fresh, so I ordered the cold jokbal salad. It was so tangy and refreshing that I kept thinking about it afterward. If you're hunting for good jokbal in Sasang, or for a Deokpo or Silla University-area spot, keep Sasang Paldo Jokbal on your list.

Sasang Paldo Jokbal is on Baegyang-daero in Sasang-gu, Busan, across from Namyoung Apartments. The white sign with the name in big letters stands out even from a distance.

Inside Sasang Paldo Jokbal: good for group dinners and family meals?
There are plenty of 4-person tables, so it looks like a good place for a company dinner or a get-together. The owner greeted us warmly as we walked in.
There's a TV on one side to watch while you eat, and the restroom is right inside the restaurant, so it's easy to use.

Near the entrance there's a spot where the jokbal is sliced. Lots of delivery orders were coming in, and the owner was cutting trotters without a break. Just seeing that, you can tell it's a local jokbal favorite that people in the neighborhood keep coming back to.

There's also a baby chair on one side, so it looks easy to visit with kids. Worth knowing if you're coming for a family dinner.
The self-serve bar at Sasang Paldo Jokbal

There's a self-serve bar in front of the kitchen. If the side dishes you were given run out, just help yourself to as much as you need.
Sasang Paldo Jokbal menu and review event

The menu covers everything from regular jokbal to buljok and cold jokbal salad. The menu board hangs large on one side, so you can take it all in at a glance from your seat.
They also run a review event! If you take part, you can get either bibim makguksu (spicy cold buckwheat noodles) or ttukbaegi odeng-tang (fish cake soup in a clay pot) as a free extra. It's a pretty generous deal, so I recommend joining in.
The country-of-origin board is also clearly displayed. Sasang Paldo Jokbal says it uses domestic trotters boiled the same day, which made me trust it even more as a customer.
What side dishes come with jokbal at Sasang Paldo Jokbal?

Once you order, they lay out a whole table of side dishes. Each table has utensils, napkins and a bone bucket.

I really liked the basic spread too. There's a good variety, from dried radish strips (mumallaengi) that go well with jokbal to crunchy pickled onions.

They also brought warm sirakguk (dried radish-leaf soup). A hot spoonful whetted my appetite and warmed my stomach before the jokbal.
How do the cold jokbal salad and self-serve rice balls taste?

This time at Sasang Paldo Jokbal we ordered the cold jokbal salad (naengchae jokbal) and self-serve rice balls. I agonized for a long time between spicy buljok and the tangy cold jokbal, but that day I wanted something fresh.
After we ordered, they brought the self-serve rice ball setup first.

While I was shaping them into nice round, bite-sized balls, the cold jokbal salad arrived at just the right moment. It was piled with colorful apple, carrot, cabbage and paprika, and it looked gorgeous and appetizing from the first glance.

True to a tangy cold jokbal, it feels refreshing just looking at it.
Tossing the cold jokbal salad with hot mustard sauce yourself
The sauce comes separately, so you toss it together right before eating. They gave us hygiene gloves and strong mustard on the side, so I added the mustard to the sauce and mixed it all up, shake shake. If you want more mustard, you can grab extra at the self-serve bar.
Once it was evenly tossed, the tangy sauce aroma wafted up and made my mouth water just from the smell. Grabbing a big pile of vegetables with the tender jokbal added a crunchy texture and it was really delicious.

Putting jokbal and the cold-salad vegetables on a lettuce wrap, then adding the side dishes one by one, made the flavor feel even richer.

Too tangy? Balance the cold jokbal with a self-serve rice ball
The tangy sauce really whets your appetite, but when it got a little too sour for me, eating a rice ball balanced it out perfectly and they went together great.

Adding a piece of jokbal with whichever side dish you like cut the richness and let me enjoy a variety of flavors. The cold jokbal and rice ball combo worked better than I expected, and I finished it all happily.
Verdict: next time, half regular jokbal, half buljok (fire jokbal)
After enjoying the cold jokbal, I got curious about the other dishes. Next time I'll order half jokbal, half buljok and enjoy both flavors at once. Sasang Paldo Jokbal is a place I want to revisit the next time jokbal crosses my mind around Sasang and Deokpo. I'd recommend it to anyone looking for a good jokbal spot near Silla University or a Deokpo-area favorite.
