Beomeo, Yangsan sushi lunch: udon with tempura on the side, Shirokuma
In short
Shirokuma is a sushi restaurant in the Beomeo residential district of Mulgeum-eup, Yangsan, Gyeongnam. At lunch the writer ordered the Standard 8P sushi, a salmon 5P and eggplant sushi 5P plate, shrimp tempura udon and cold soba. Even at the busy hour, tables turned over quickly, so the wait was short. The standout at Shirokuma was the shrimp tempura served separately from the udon, so it stayed crispy.

What kind of sushi restaurant is Shirokuma in Beomeo, Yangsan?

Fresh fish matters in sushi, but so do the texture of the rice, the right seasoning and how every ingredient works together. So whenever I go out for sushi, I find myself checking what ingredients they use and how well they cook the rice. Shirokuma in Beomeo, Yangsan, put real care into everything, from the ingredients down to each grain of rice.

How long is the lunchtime wait at Shirokuma?
Even at busy lunchtime, the wait at Shirokuma wasn't very long. The restaurant isn't huge, but there is a waiting area, and tables turned over faster than I expected.

Shirokuma menu and prices

Complimentary miso soup and salad
Before the sushi properly began, Shirokuma brought out a pre-meal broth and a salad. A warm broth to settle the stomach, plus a fresh salad, made for a lovely start to the meal at this sushi place near Yangsan Pusan National University Hospital (known locally as Yangbudae).

Shirokuma reportedly uses fresh large flatfish every day and Norwegian raw salmon of Superior grade, and the rice that is the base of the sushi is carefully cooked from Koshihikari rice.

What does Shirokuma's eggplant sushi taste like?
I ordered the salmon 5P + eggplant sushi 5P, and if you visit Shirokuma in Beomeo, Yangsan, the eggplant sushi is one of the signature items you have to try. When you say sushi, you usually think of fish or seafood first, but sushi made with eggplant!

Eggplant can easily taste bland, but Shirokuma's eggplant sushi comes with an addictive sauce that is sweet and rich in umami, and it was much tastier than I expected.

What's in the Standard sushi 8P plate?
Shirokuma's Standard sushi 8P consists of 2P aged fish, salmon, tuna loin, egg, eggplant, a fried tofu pouch and vinegared shrimp. With so many kinds of sushi on one plate, no single flavor dominates, and it was fun comparing the different textures and tastes of each ingredient.

From familiar sushi to pieces with Shirokuma's own character, you get a nice variety in one sitting, and picking out the ones that suit your taste one by one was a real pleasure.

Shirokuma, a Yangsan lunch sushi spot, takes care to keep each grain of rice plump and springy while making sure it is never undercooked and comes out soft, and you can feel their sincerity about sushi.
Shrimp tempura udon: is the tempura served on the side?
Shirokuma's shrimp tempura udon is a great side to have with sushi! With udon, a warm, deep broth matters, but if you also get crispy shrimp tempura, even better! The plump noodles were pleasantly chewy and fun to slurp, and the clean broth blended well with them, so it was easy to enjoy.

What I especially liked is that Shirokuma serves the shrimp tempura and the udon separately. Normally when the tempura comes in the udon, it soaks up the broth and loses its crunch quickly, but since Shirokuma brings the shrimp tempura on its own, I could first enjoy the tempura's original crispy texture in full.

Cold soba to go with your sushi
One of the best things to pair with sushi at Shirokuma is the soba (buckwheat noodles). Its cool, clean taste refreshed my mouth, so it went well with the sushi.

With soba, the texture of the noodles and the harmony with the broth are what count, and this one had a cool, light flavor that made it a great match for sushi!

Is Shirokuma in Beomeo, Yangsan worth it for lunch?
Sushi depends on the freshness of every ingredient and how it comes together with the rice, and I was impressed by how Shirokuma, near Yangbudae, stays true to the basics while still trying to serve even tastier sushi. If you're craving good sushi in Yangsan and want signature dishes that go beyond ordinary sushi, I recommend Shirokuma 💚
