In short
Fluffy Bake Shop is a baked-goods bakery café a short walk from Exit 2 of Gongdeok Station in Mapo, Seoul. How to store madeleines, financiers and canelé at home
Here are the storage instructions and tips for the best taste, as posted at the counter.
- Madeleines & financiers: Keep 2–3 days in a cool place, or seal and freeze for up to 2 weeks! After freezing, thaw for 30 minutes to an hour, or reheat in an oven/air fryer at 160°C for 3–5 minutes for best taste. (Eating them lightly frozen is also recommended)
- Canelé: Can be sealed and frozen for up to 2 weeks. Reheat in an oven or air fryer at 160°C for 10–15 minutes, then let cool slightly — you'll really get that crisp-outside, chewy-inside texture.

With the packaging all done, let's hurry home to try these!
Honest tasting notes on all six bakes

I ran straight home just to eat this. Let's break down why it's known as one of the best Gongdeok Station dessert spots!!!!

Opening the wrapping~~ here are the six desserts I picked, all neatly lined up!
So cute,,,,
Gamtae financier and apple churros financier

First up, the two financiers. I bought the gamtae (dried laver) financier out of curiosity, and it surprisingly hit the spot! The sweet, plain financier is topped with salty, savory dried laver, which really brought out a distinctive umami flavor haha. The sweet-and-salty balance isn't overpowering at all — a refined taste that even older folks could enjoy without hesitation!!

The apple churros financier was my sister's top pick haha. The top is loaded with cinnamon sugar and crunchy crumble, which made for a fun texture!!
Inside, a subtle apple aroma blends with that distinct churro cinnamon flavor, giving a crisp, sweet bite each time — a proper sugar rush haha.
Lemon madeleine and Nutella madeleine

Next, the two madeleines! The lemon madeleine, being Fluffy Bake Shop's best-selling item, was pure zestiness! The thin glaze on top shatters crisply, and the tangy-sweet lemon flavor balances beautifully with the buttery bread base. It's not overly sour, just clean and refreshing — a flavor I'd recommend without hesitation to anyone who likes zesty desserts!

The Nutella madeleine has rich Nutella plus a nutty crunch from what tastes like macadamia. It felt like a soft madeleine reinterpretation of a fancy Ferrero Rocher?! One bite fills your mouth with sweetness and nutty richness in perfect harmony — ideal for a sugar fix haha.
Vanilla canelé and Earl Grey canelé, reheated in an air fryer

Finishing off with canelé! As instructed, I ran them in the air fryer at 160°C for 10 minutes, let them cool slightly, and tasted. The outside was thin and crisp while the inside stayed chewy and moist — this is the real deal, crisp-outside chewy-inside, hehe. The Earl Grey canelé in particular had a fragrant tea leaf aroma that lingered in my mouth with every bite, which was really satisfying, and the vanilla canelé had a rich, nutty vanilla bean flavor that made it clear why it's a best-seller. Such a fun way to end the day!
What stood out at Fluffy Bake Shop
- A wide selection of madeleines, financiers, and canelé made it easy to pick according to taste — a great Gongdeok Station dessert spot!
- The canelé is good as-is, but reheating in the air fryer really elevated the texture and flavor.
- The gift wrap set, with its cute green packaging and shopping bag, is perfect for a return gift or a dessert present.
- It's within walking distance of Gongdeok Station and offers 1 hour of free basement parking, making a visit less of a hassle.
If you're near Gongdeok and want a sugar fix with well-made baked goods, or you're looking for a clean, simple dessert gift, I recommend Fluffy Bake Shop!
