The ultimate gukbap (soup with rice) in Manchon-dong, Suseong, Daegu: "Jeju Seobine Haejangguk" and its deep bone broth.

I was craving a proper bowl of gukbap not long ago, so I went, and I'd like to introduce this hidden gem in Suseong, Daegu. When you want to fill up properly, gukbap is the first thing that comes to mind, right? Jeju Seobine Haejangguk, Manchon Direct Branch (제주섭이네해장국 만촌직영점) left me completely satisfied on everything from flavor to parking, cleanliness and service, so I'm happy to write a detailed review.
Is parking easy at Jeju Seobine Haejangguk, Manchon Direct Branch?
Right in front of the restaurant there is a spacious private gravel parking lot that fits several cars. It's getting word-of-mouth fame as a Manchon-dong gukbap place, and with its "30 years of tradition" vibe plus a big parking lot, it looked perfect from the outside. I arrived hungry on a late evening after work.

The bright, clean signboard is visible from far away, so it was easy to find.

Parking around Manchon-dong is honestly hell, but thanks to the private gravel lot right in front, I parked with no stress at all.

Takeout and events at the time of my visit
There was a notice saying "takeout available for every menu item," and a banner for a ₩1,000 opening discount caught my eye too. Besides the beef haejangguk, the menu is full of tempting dishes like Jeju hanchi mulhoe (chilled squid soup), hanwoo yukhoe mulhoe (chilled beef tartare soup), hanwoo ujoktang (beef leg bone soup) and Jeju dombae pork (sliced boiled pork)! A draft beer 2+1 event was running as well, so the place seemed just right for coming at night for a cold drink with a hot soup.
What are the interior and ordering like?
Inside, the restaurant was much bigger and more comfortable than it looks from outside. None of that shabby or sticky feeling you sometimes associate with gukbap places; it was stylish and kept clean.

The tables are nicely spaced, and the white and wood tones go together for a very tidy look.

In line with current trends, ordering is contactless and easy, using the tablet installed on each table.

What did I order, and how much was it?
I ordered Jeju Seobine's signature beef haejangguk (beef plus seonji, congealed ox blood, ₩11,000), haejang yukkalguksu (spicy beef noodle soup) and a Coke for some fizz, and the total came to ₩25,000. For people who can't eat seonji, there's a separate "beef haejangguk (without seonji)" option!

There's also a "Naver receipt photo review event." If you scan the QR code and write a review with photos and at least 20 characters, they give you a free drink, so if you visit, I'd say take part and grab the perk.

What side dishes are at the self-serve bar?
There's a self-serve bar where you can refill side dishes as much as you like, stocked with kkakdugi (cubed radish kimchi), cabbage kimchi, stir-fried fish cakes, ssamjang (seasoned dipping paste), cucumber peppers, cheongyang chili and minced garlic. The main broth matters in gukbap, of course, but it's no exaggeration to say the sides account for more than half of it!
Around the stainless steel containers there wasn't a single drop of broth splashed; everything was wiped sparkling clean. They were filled with crunchy, refreshing kkakdugi, nicely ripened spicy cabbage kimchi, appetite-boosting fish cake stir-fry, ssamjang, and fresh cucumber peppers and cheongyang chili.
Especially, there was plenty of minced garlic to bring out the flavor of the gukbap, and being able to customize your broth with it to taste may be this Manchon-dong gukbap place's unique strength.

How did the beef haejangguk broth taste?
Despite its bright red look, Jeju Seobine's beef haejangguk isn't just spicy: the bone broth is simmered deeply, so it's rich yet clean and refreshing in the aftertaste. It came bubbling on the table, giving off a savory aroma, and my mouth was watering before I'd even eaten.
My first look at the gukbap with a bowl of rice! Next to the freshly cooked, fluffy, glossy white rice, the haejangguk in a ttukbaegi (earthenware pot) filled almost to overflowing looked really appetizing.

The deep red broth is generously topped with green onions. The color contrast of red broth and green onion whets the appetite, and when I took the first spoonful, it wasn't just harsh and spicy as it looks; the bone broth was simmered deeply, so it was rich yet had a very clean, refreshing aftertaste, and that was the best part.

The ingredients and minced garlic combo
The pot is really packed with meat and vegetables! There's plenty of tender beef, slow-boiled until it shreds along the grain, and generous amounts of bean sprouts for a cool, clean taste and savory ugeoji (dried cabbage leaves), so the chewing is a work of art...!

I stirred in about half a spoon of the minced garlic from the self-serve bar, and the umami and flavor got even deeper. Really delicious.

I dropped a bowl of rice into the hot, rich broth, scooped it up and topped it with a piece of crunchy kkakdugi, and the whole day's fatigue seemed to melt away. I could feel in my whole body why so many people recommend Jeju Seobine as a top Manchon-dong gukbap spot.
