Korean BBQ in Jongno, Daegu with cut-open beef daechang: Hubaldae
In short
Hubaldae Daegu Jongno Branch (후발대 대구종로점) is a Korean BBQ restaurant in Jongno, Jung-gu, Daegu, where staff grill the meat for you from start to finish. We ordered 2 servings of red clay pork neck and 1 serving of grilled Korean beef daechang (beef large intestine) at 14,900 won per serving. The staff cut the daechang open to show how cleanly it was prepped, wrapped the honey potato ssam for us and finished with chewy kkakdugi (radish kimchi) special fried rice. The meat, side dishes and fried rice at Hubaldae were all delicious, and the service was so kind it almost felt too much.

Jongno, Daegu, a Korean BBQ place where they grill everything for you: Hubaldae! I'd passed this place so many times, and it always had a wait and looked packed, so I'd been telling myself I should try it one day! You can feel the love of baseball right from the exterior, haha..
What are the interior and seating like at Hubaldae Daegu Jongno?
Inside, Hubaldae has about 9 tables for four, a decent size, and it felt pleasant. It looked fine for a small get-together. I also thought it was a thoughtful touch that they have baskets where you can put your bags.

Apparently Hubaldae started in 2010 in Seomyeon, Busan. The name means the "rear party": the group that set out first prepares the meal and the schedule, and the group that joins later arrives late, rests comfortably and eats the food that's been prepared. In other words, the guests in the restaurant are the stars of Hubaldae!

They seem to have a really great mindset about customers,, and the staff really were so kind!!!! So kind that I almost felt sorry (T_T). Also, there were lots of baseballs and autographs from baseball players inside the restaurant!!!
Hubaldae menu and prices: what we ordered

The main menu at Hubaldae was Korean 1+ grade hanbon (domestic pork) fresh pork neck raised on red clay, fresh hanbon pork belly, grilled Korean beef daechang (beef intestine) and New Zealand special yang (tripe) grill, with special ramen and special fried rice as sides. I loved how simple the menu is. Corkage is free too!!!
- Red clay fresh pork neck, 2 servings (₩14,900 per serving)
- Korean beef daechang grill, 1 serving (₩14,900)
- Special fried rice (₩6,900)
- Beer, 1 bottle (₩5,000)
What side dishes come with Korean BBQ at Hubaldae?
The side dishes were unique, with basil, angelica leaves and honey butter potatoes. The table was full of sides that looked great with meat. It said "World first!! One of a kind!!" and I honestly had never seen it before, hahaha.
They also came with garlic, sundae (blood sausage), mushrooms, shishito peppers, myeongi namul (wild garlic pickles), scallion salad, kimchi jjageuri (kimchi stew) and more. The myeongi namul and scallion salad were cut up so they were easy to eat. I loved that kimchi stew comes as a basic side, and it was really good with the meat!

Staff grill everything from start to finish, and before the meat arrived they put the honey butter potatoes, shishito peppers, garlic, sundae and mushrooms on the grill first!
Why does Hubaldae cut the daechang open to show the inside?

Our main dishes: 2 servings of pork neck and 1 serving of grilled daechang!

The Korean beef daechang at Hubaldae was cut so you can see all the way inside, and the staff member said they do this to show that it has been cleaned thoroughly! They explained every single thing from the very start, so I felt really well looked after,, both the daechang and the pork neck had a great color haha.

The staff grilled quickly and well, and cut the meat into bite-size pieces. The potatoes were turning golden brown too.. I was so grateful that they looked after every little thing, from the side dishes to the meat.

How do you eat Hubaldae's signature honey potato wrap?
The honey potato wrap is a honey potato topped with myeongi namul, wasabi, kimchi, a basil leaf and a piece of meat dipped in sauce. The pork neck finished first, and the staff made our first wrap as this signature honey potato wrap! Before adding the wasabi and basil, they carefully asked whether we eat them (T_T). Anyway, wow, eating it this way was so good. It was my first potato wrap, and it was nutty with lots of things mixed together for varied flavors, and delicious!

I finished cooking the rest of the pork neck and tried other combinations too, and everything was good. Still, wrapping it in the potato had a strangely special charm, haha. The potato is sweet and nutty even on its own, so it's great as a side too.

I wasn't going to drink, but as I ate I craved a beer, so I ordered one..

How does Hubaldae's grilled Korean beef daechang taste?
The daechang is grilled longer than the pork neck! Midway through, the staff brought chives and grilled them along with it. They cut the daechang into smaller pieces while grilling, and grilled the sundae, shishito peppers and mushrooms together too!

T_T_T The daechang was so good too..!!!! Chewy texture with that signature nutty flavor.. Both the pork neck and the daechang were great, the meat is good here. The side dishes to go with it were all perfect too..
What is Hubaldae's special kkakdugi fried rice like?
The special fried rice (₩6,900) was kkakdugi (cubed radish kimchi) fried rice. I liked the chewy texture, and it was nicely sweet and perfectly seasoned, so it was delicious.
I liked everything, from the meat and side dishes to the fried rice, and the staff were all so kind that I was completely satisfied! If you're looking for a Jongno, Daegu place where they grill everything for you, I really recommend it 🤍
