Sushi restaurant near Yangsan PNU Hospital: 20-minute wait, Shirokuma

In short

Shirokuma is a value sushi restaurant in the Beomeo housing district of Mulgeum-eup, Yangsan, directly in front of Yangsan Pusan National University Hospital. Arriving at noon on a weekday meant a 20-minute wait for two tables to clear, after which two adults shared the lunch-special Premium Sushi 12-piece and Special Sushi 10-piece, with udon included at no extra charge. The aged sashimi and the signature eggplant sushi at Shirokuma were good enough to plan a return visit with a CatchTable reservation.

Interior of Shirokuma with chefs making sushi

Walking in, you can see three chefs making sushi right in front of you, so it feels like watching an omakase in the making, haha. If you're looking for a good-value omakase experience in Yangsan, I'd recommend this place.

There were 7 tables total inside, ranging from 2-seaters to 4-seaters. It's not fully divided into private rooms, but there are about 2 partitioned spaces where you can eat somewhat separated from the other tables.

Shirokuma, the popular restaurant in the Beomeo district in front of Yangsan PNU Hospital, offers assorted sushi ranging from standard sets to omakase. Here's a Shirokuma tip: if you visit during lunch hours, you can add udon or cold soba (naengmomil) at no extra charge! (Don't miss this Yangsan sushi spot!!)

Premium 12-piece and Special 10-piece sushi for two

Premium 12-piece and Special 10-piece sushi sets served together

Two of us adults ordered the Shirokuma Premium Sushi 12p and Shirokuma Special Sushi 10p as the lunch special, which came with udon included. Eating it this way, we finished feeling quite full, without any sense of not having enough, haha.

Salad and miso soup served before the meal

Before the meal, they gave each of us a small salad and miso soup, which was a nice light palate cleanser to start.

Aged sashimi: mullet and olive flounder

I started with the aged sashimi, which came in milchi (a type of herring) and flounder varieties. The softness and umami unique to aged sashimi were there in full, making it a great choice to start with ꔛ♡˒˒. The fish wasn't sliced thin either — it had some thickness to it, so I could really taste the texture of the fish alongside the rice.

Salmon and seared salmon

Next came the salmon and seared salmon, with just the right amount of fat, melting softly in the mouth. I'm thinking of ordering an all-salmon-sushi set next time. Highly recommend!

Tuna loin

The tuna loin felt lighter than the salmon and was a perfect middle-of-the-meal bite, haha. The rice-to-fish ratio was just right, letting the flavor of the tuna come through. *They recommend eating the tuna loin without dipping it in soy sauce!

Beef sushi

Warm beef sushi served at the table

I'd recommend eating the beef sushi while it's still warm! The beef itself was well seasoned, and eating it warm made it moist and tender.

Soy-marinated shrimp and garlic shrimp

The soy sauce shrimp had that distinctly salty-sweet soy flavor added in, making it moist and delicious, haha. The garlic shrimp was also great — the shrimp's springy texture paired with a subtle hint of garlic, the kind of flavor you keep wanting more of (๑ᵔ⤙ᵔ๑).

Hanchi (small squid)

Hantchi sushi topped with vegetables

The hantchi (small squid) had a chewy, springy texture that stood out. The chewiness held up the more I chewed, and the vegetables on top added a subtle fragrant note, making it a nice way to wind down the meal.

The signature eggplant sushi

This is the signature eggplant sushi — the dish I expected nothing from but ended up loving the most.. 𓊆ྀི❤︎𓊇ྀི Who knew a Japanese restaurant near Yangsan PNU Hospital would do eggplant this well. I dislike eggplant to the point of gagging, but how can this taste this good..? There was none of that typical eggplant smell or mushy texture — it was soft and nutty, and I wanted to order more of it ㅠㅠ. This would be a great place to bring a picky-eating kid if you're visiting the hospital area.

Finishing with futomaki (thick sushi roll)

The finishing touch — futomaki! Who knew there'd be a great futomaki spot near Yangsan PNU Hospital in the Beomeo district of Mulgeum, Yangsan. It was about palm-sized, huge, and packed full inside, haha. There was quite a lot of tuna and salmon in it, so one bite already filled me up.
