Visited Sushi Doku The Songdo, one of the Songdo sushi restaurants that nails visuals, quality, and flavor all at once. A friend who'd already been told me there's a wait, so either do an opening run or book ahead — I went with the opening run haha (reservations only work for parties of 6+ ㅠㅠ). Right at 11am opening there was almost already a wait — Sushi Doku The Songdo is number one among Songdo sushi spots. If you want to avoid the wait... I highly recommend the opening run 👍 If you show up with 5+ people and there's no full table, you might have to split up and sit separately.

What comes with the 25,900 won premium sushi set
The Premium Sushi Set at Sushi Doku The Songdo, one of the top Songdo sushi restaurants — a visual that lives up to its name 💗 It came out as a generous full tray: 10 pieces of sushi, chawanmushi, salad, udon, and karaage & shrimp tempura. With visuals and quality this high, Sushi Doku The Songdo in Songdo would be great if you want to treat someone special!
The chawanmushi (steamed egg custard)
First up, chawanmushi. Chawanmushi (also spelled jawanmushi) is the Japanese steamed egg custard with shrimp, ginkgo nuts, mushrooms, and more inside. It came out warm, firm on the outside, and really soft in texture. Great appetizer before diving into the sushi 💛


Inside the chawanmushi there was one shrimp and one ginkgo nut, and the subtle savory flavor seemed to open up my palate!

Salad and udon
The crisp salad vegetables at Sushi Doku The Songdo were fresh — so fresh there wasn't even a hint of bitterness!! The salad works great alongside the sushi before, during, and even after the fried items — nice and clean to pair with everything.
The udon that came with the set had a surprisingly large portion. Definitely not just a token side!! There was a cute Nemo-shaped fish cake in the udon 🧡 The broth was clean, not too intense. Since sushi is cold, having warm udon to reset your palate in between was really nice.


The Premium Sushi Set includes halibut, red sea bream, salmon, squid, sweet shrimp, akami tuna, red shrimp, red snow crab, eel, and ankimo sushi — the fish on top of the rice was cut into just the right size and thickness, making it look even more appetizing 💕

How do you use the soy sauce brush served to each diner?
At Sushi Doku The Songdo, each person gets their own soy sauce brush, and you brush soy sauce onto the sushi with it. At other sushi places I've dipped the sushi straight into a soy sauce dish, or used pickled ginger to brush it on — but getting your own brush means you can add exactly as much soy sauce as you want without messing up the shape of the sushi. Really nice touch.

Tasting all 10 pieces of sushi, one by one
Starting with halibut sushi
The right way to enjoy sushi! Start with the white fish first. First up: halibut sushi. It's the most basic of the basics, the most unassuming sushi on the list — but calling it 'unassuming' almost feels unfair given how clean and chewy the texture was. It left a strong first impression of Sushi Doku The Songdo's sushi.

I ordered with wasabi included, and it came in a tiny amount, so I mixed some into the soy sauce and also placed some directly on the sushi.
Red shrimp sushi and squid sushi
Sweet red shrimp sushi 🦐 It's on another level of sweetness and richness compared to regular shrimp — people call it 'lobster shrimp' for a reason!
Ikka sushi. I wondered what 'ikka' was, and it turned out to be squid sushi. The chewy texture is the whole point of ikka (squid) — it felt properly chewy. Since every ingredient is prepared using traditional Japanese aging techniques, the squid sushi felt even chewier and a bit sweeter.

Red sea bream sushi topped with ankimo
Sea bream is love, but topped with ankimo too? The red sea bream had a firmer, yet still soft, texture compared to the halibut! You get that same clean, light flavor typical of white fish, and with ankimo on top, there was a nutty richness alongside the softness 💗

Sweet shrimp sushi
Even sweeter than the red shrimp sushi — sweet shrimp. True to its name, sweetness is its whole thing! Two pieces of sweet shrimp sat on top, and along with the sweetness there was a nutty flavor too!

Red snow crab sushi, a first for me
First time ever having sushi made with actual red snow crab meat haha. This wasn't imitation crab stick, and it wasn't the crab meat you buy at the store either. It genuinely had that soft, sweet taste of real red snow crab meat!!!! 🦀 You could actually feel the fibrous texture of the crab meat in this sushi.


Salmon sushi
Rich, fatty salmon sushi. Salmon needs that fattiness to taste its best, right? 🧡 Sushi Doku The Songdo, one of the top Songdo sushi restaurants, nails salmon sushi all the way down to the long tail piece 👍 The fattiness wasn't heavy, chewed soft and smooth, and the salmon had a nutty richness too.

Akami (lean tuna) sushi
Clean and lean akami tuna sushi. Akami is the tuna cut from the back and center of the body! It's reddish in color with low fat content, so it's clean and light rather than greasy.

Eel sushi and ankimo gunkan
Nicely grilled, sweet eel sushi. You can't have eel sushi without that sweet glaze >_< The eel at Sushi Doku The Songdo had no fishy taste, was moist, and so soft. The sweet sauce was a perfect match!
Ankimo gunkan that just oozes class. I'm someone who's totally hooked on ankimo sushi!! Once you taste that richness, you get addicted. Sushi Doku The Songdo serves ankimo gunkan — monkfish liver — with a deep, rich, nutty flavor on top of everything else! It has a completely different charm from regular fish sushi 💕 The liver melts smoothly in your mouth, and it's exactly what confirms this is one of the best Songdo sushi spots 👍
The shrimp tempura and karaage included in the set
Shrimp tempura and karaage came included in the Sushi Doku set. Fried items are great to pair in between bites of sushi! Fresh and hot, one bite in haha, and that crunch is exactly what fried food should be!! The shrimp tempura was packed full inside with a nice plump texture. The karaage came in two pieces, made with chicken thigh meat, so it was extra moist!
