What is Shirokuma, the sushi restaurant near Pusan National University Yangsan Hospital?
Shirokuma (시로쿠마) is a sushi restaurant in the Beomeo housing district of Mulgeum, Yangsan, close to Hwangsan Elementary. It's the first place I think of when I think of sushi, and the food and the friendliness have brought me back dozens of times already, haha.
Because it's in the Beomeo district, lots of staff from Pusan National University Yangsan Hospital come here, along with office workers nearby and moms' groups, so it's always busy : ) For parking, use the spots in front of the shop or the Hwangsan Children's Park public car park.

Can you get a dinner table at Shirokuma without a reservation?
Reservations are a must at Shirokuma even at dinner. Same-day booking works, and you can even book a few minutes before you arrive, so whenever I come I try to reserve first ~~ : )
This time I came for dinner. I usually eat here at lunch, so I wondered if dinner would be busy too :0 And wow, haha. If I hadn't booked, I wouldn't have gotten in, T_T Lots of people were turned away with no seats, and since slots are every 30 minutes, I could hear 6 o'clock reservations arriving one after another while we ate ~~
So book early, as early as you can, and I'd recommend the 5:30 slot when break time ends, or a much later one! Right inside the entrance are the kitchen and the register, and the staff and the owner greeted us warmly, so the friendliness was obvious from the moment we walked in : )
We arrived at 5:30 when break time ends. Some people were already waiting, and every single table was a reserved seat,, whoa. I knew it was popular, but not this popular at dinner. People who try it always come back; it's a place everybody likes. The fish is thick and fresh, but above all the rice is delicious, which is why I keep coming back regularly.

Shirokuma menu and how to order
You order easily by table order (tablet). The lunch special lets you choose between soba and udon (noodles), which makes it great value : )
There are many sushi sets, priced by which sushi go in them, in 8-piece, 10-piece, 12-piece and other sizes. There are also à la carte items and plenty of noodle dishes to enjoy alongside the sushi : )

Once your order goes in, a salad and miso soup come out. The place is so popular that even the salad is super fresh, haha, and the dressing is nutty ~ While you're eating that, the sushi arrives quickly : )

What's in Shirokuma's ₩17,000 Special 10-piece sushi set?
We ordered two Shirokuma Special sushi 10P sets (₩17,000 each) : ) It's made up of 3 kinds of aged fish, salmon, tuna loin, egg, beef, squid, eggplant and soy-marinated shrimp, and you can choose to have the wasabi in or out : )

Shirokuma egg sushi, my child's order every time
My child's usual egg sushi (tamago, sweet omelet) ~~ : ) Each set has 2 pieces and we ordered 3 sets. Whenever we come, my kid eats this, and says Shirokuma's egg sushi is the best, haha.

Eggplant sushi, Shirokuma's most famous piece
Eggplant sushi is what Shirokuma is most famous for. It's not the eggplant you'd normally picture: it's crispy yet chewy, with a nutty sauce and a great texture, so good. It's been a while, and I was even tempted to order the eggplant sushi on its own. Total charm ~~ : )

Udon added to our Shirokuma dinner
I always have the lunch special, so skipping the noodles just because it was dinner felt like a shame, and I added an udon, haha. The noodles were boiled nicely chewy, and above all the broth was cool and deep, so it went really well with the sushi!

Why Shirokuma's sushi tastes so good: the rice and the soy sauce
I think the reason Shirokuma stands out even among sushi places is the rice. They use Koshihikari rice, and with a recipe developed in-house they make chodeori (a dark reddish sushi rice seasoning), which gives the rice its deep reddish-brown color, they say. They also use aged fish whose umami is boosted by their neta (topping) aging technique, and they pile on the ingredients without skimping, so the sushi is filling and delicious.

The soy sauce for dipping is apparently another secret. They don't use store-bought sushi soy sauce; they simmer 8 or more ingredients for a long time using their own recipe. The soy sauce has its own special flavor and makes the sushi taste even richer.

Is the 10-piece set at Shirokuma enough food?
The fish is big and the rice is generous, so even just 10P is really filling, haha. Even the 8P leaves you full and satisfied ~~ : )
Only people who've tried it know : ) Honestly, before Shirokuma I liked other sushi places and went often, but after trying Shirokuma I always think of this place, haha.
Normally, eating sushi with wasabi can sting your nose or make the back of your head throb, but that has never once happened at Shirokuma, so I think I can enjoy it even more comfortably, haha.

Shirokuma's signature eggplant sushi, once more
Shirokuma's signature dish is the eggplant sushi. At first I was like, eggplant on sushi?? haha. But the eggplant sushi is so good T_T Crispy and chewy, nutty, with a great texture! It has lots of devoted fans, and it's such a signature that eggplant sushi is the first thing I think of with Shirokuma, haha.

Udon alongside the sushi ~ The noodles are boiled nicely chewy and the broth is great too! The portion is generous, so it's good to share with family ~ ^^
Shirokuma receipt review event
Shirokuma runs a receipt review event where everyone wins something (no blanks), and the handmade chocolate that comes as dessert is delicious too, haha. Join the easy event and enjoy the handmade chocolate! I recommend Shirokuma, the sushi spot near Pusan National University Yangsan Hospital ^^
