Busan shabu kalguksu at induction 5 and 6, self-fried rice: Yunujae

In short

Yunujae Munhyeon Shabu Kalguksu is a shabu-shabu and kalguksu (knife-cut noodle) restaurant on Suyeong-ro in Munhyeon-dong, Nam-gu, Busan. The shabu kalguksu set costs 11,000 won per person and includes 70g of sirloin, vegetables and mushrooms, noodles and fried rice; the writer, a regular, adds extra sirloin and runs the three-part combo — meat at induction level 5, noodles at level 6 for 5 minutes, then fried rice cooked at the table — with a 2-to-1 soy sauce and wasabi dip in the red broth. That order and the sauce ratio are what make Yunujae worth returning to.

Yunujae Munhyeon Shabu Kalguksu makes its noodles in-house, which is one reason it's one of the Munhyeon-dong spots I trust haha.

The eating order: meat, then noodles, then fried rice

Here's the ideal way to enjoy Yunujae Munhyeon Shabu Kalguksu in Munhyeon-dong, Busan — follow this order! Meat → kalguksu noodles → fried rice.

I come to this Munhyeon-dong favorite so often that I've got the routine down by now — I always add extra meat on my first order and fill up on meat first haha.

Vegetables and broth warming on the induction burner

Step 1: set the induction to 5 and cook the sirloin first

It's convenient that you control the heat via the induction burner — warm the vegetables and broth until just before boiling, then

pile in all the meat, and once it starts boiling, set the induction to 5 and enjoy the vegetables and meat together.

When you order extra meat, you get a really generous amount, and since there are already plenty of vegetables in the base, eating them together gives great texture and flavor.

The dipping sauce: 2 parts soy sauce to 1 part wasabi

Here's how to enjoy Yunujae Munhyeon Shabu Kalguksu even more — mix soy sauce and wasabi in a 2:1 ratio, then dip the meat and vegetables in it. Even tastier hehe.

Definitely try it with the sauce haha. It's genuinely delicious!

Step 2: boil the kalguksu noodles 5 minutes at induction 6

Round two, let's move on to the noodles. There's sujebi (hand-torn dough) dough and kalguksu noodles too. Since they're made in-house, the quality really stands out.

Set the induction to 6 and boil for 5 minutes — that's it. The broth soaks into the noodles beautifully and it's seriously delicious. I've ordered extra noodle add-ons before too haha.

Step 3: fry the rice yourself at the table

Round three, the finale — Korean-style dessert fried rice. Drain out the broth, add just one ladle back in, and fry the rice yourself.

Self-fried finishing fried rice in the pot

You've got to fry it until you hear that crackling sound — that's real fried rice for you. Skip the mushy bibimbap-style version and make it properly.

Finishing off with that fried rice really feels like a full carb reload haha. If you're looking for a place to eat in Munhyeon-dong, trust my recommendation and give Yunujae Munhyeon Shabu Kalguksu a try!
