Today, I headed to Mibundang Dongtan Station Branch (미분당 동탄역점), said to have a line near Dongtan Station. I visited in person with friends for lunch and was completely won over by the deep, rich broth, generous portions, and Mibundang’s distinctive atmosphere.

We arrived at Mibundang Dongtan Station Branch at lunchtime, holding onto our growling stomachs. Seeing customers lined up from a distance, I immediately knew this was a real pho favorite near Dongtan Station.

Mibundang’s warm, calm wood-fronted exterior creates a neat atmosphere amid the busy city. There is an unmanned kiosk beside the entrance, so we could conveniently order while waiting.

We carefully chose from the kiosk menu to try the signature dishes. The three of us ordered two brisket phos and one beef belly brisket pho.

After ordering, we waited about five minutes before entering. While we waited, I read the signs beside the entrance about “The Origin of Mibundang” and “How to Enjoy Pho Deliciously.” The message about aiming to create a place where everyone can eat in quiet comfort really stood out.

A counter layout that makes solo dining easy

As soon as we opened the door, a cozy U-shaped dachi (counter) table unfolded before us.

Every seat faces the kitchen, so we could watch the cooking process directly. It was also laid out so that solo diners could eat comfortably.

The open kitchen was kept exceptionally clean, and there was an energetic feel as the staff busily prepared pho. Each seat was neatly set with individual sauces—hoisin, chili, and Mibundang hot sauce—plus utensils and tissues. The suspended sauce containers were unusual and made great use of the space.

At last, our pho arrived! Our brisket pho and beef belly brisket pho came out one after another.

The generous meat topping piled over the bowl-full of broth was impressive.

In particular, the brisket pho I ordered had finely shredded meat along the grain, which looked ready to soak up even more broth. Chopped scallions and spicy chili peppers on top stirred up my appetite. The beef belly brisket pho combined beef belly and brisket, so we could enjoy two textures at once.

I started with a spoonful of broth. It was deep and rich, preserving a Vietnamese-style flavor while staying refreshing and clean for Korean palates. There was a gentle spice aroma, but it was not overpowering, so it was easy to enjoy.

Make mixed noodles with hoisin and chili sauce

Put some noodles, bean sprouts, and meat into your personal bowl, then mix hoisin and chili sauce—or Mibundang hot sauce—in a 4:1 ratio and toss everything together. The sweet-savory, spicy sauce coats the noodles for a different kind of mixed pho. If you love cilantro, I highly recommend adding plenty and mixing it with hoisin!

After enjoying the clean broth for a while, swirl one round of Mibundang hot sauce into it. The deep, rich broth turns into a spicy, warming one, making the pho perfect for a hangover meal too. Mibundang hot sauce is quite hot, though, so add it little by little and taste as you go! Following the suggested method made one bowl of pho feel like two different dishes.

Unlimited free noodle, bean sprout, and broth refills

As we happily ate, I realized I was nearly out of noodles. But there was no need to worry. One of Mibundang’s biggest strengths is its unlimited free refills.

When we asked a staff member for an extra noodle portion, they soon brought us a bowl piled high with noodles and bean sprouts. But it was not just noodles and bean sprouts—they served a whole bowl topped generously with meat as well. I was touched by how plentiful it was, almost like a fresh first order.

With extra broth too, it felt as if we had gained another whole bowl of pho. As big eaters, we finished every last bit of the refilled noodles and meat, ending a truly filling and satisfying lunch. Getting this service with just one meal ordered per person is incredible value.
